These Buffalo White Bean Tacos are a flavorful vegetarian twist on classic buffalo dishes, featuring creamy white beans simmered in a spicy buffalo hot sauce blend and served in crispy pan-fried flour tortillas with melted cheddar and mozzarella cheese, garnished with fresh cilantro. Perfectly balanced with smoky, spicy, and creamy elements, they’re a quick and satisfying meal that can be easily customized or made vegan.

Ingredients

For the Tacos

  • 4 flour tacos

For the Filling

  • 1 tbsp olive oil
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 small red pepper, diced
  • 1 x 400g canned white beans, drained and rinsed
  • 90ml buffalo hot sauce
  • 100g sour cream
  • 1 tsp smoked paprika
  • 0.5 tsp cayenne pepper
  • 0.5 tsp dried oregano
  • 0.5 tsp cumin
  • Salt and pepper to taste
  • 150g shredded cheddar and mozzarella cheese
  • 10g cilantro, chopped finely

Instructions

  1. Sauté Vegetables: Heat the olive oil in a frying pan over medium heat. Add the diced red onion and red pepper and sauté for 5-6 minutes until softened. Then add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  2. Prepare Bean Mixture: Add the drained white beans, buffalo hot sauce, sour cream, smoked paprika, cayenne pepper, dried oregano, cumin, salt, and pepper to the pan. Stir well to combine all ingredients thoroughly.
  3. Thicken Sauce: Warm the mixture gently while using a wooden spoon to crush about one-third to one-half of the white beans directly in the pan. This will create a thicker, saucier texture.
  4. Soften Tacos: Lay each flour taco over the warm bean mixture briefly to moisten and soften them with the sauce.
  5. Assemble Tacos: Spoon the white bean mixture onto half of each taco, then sprinkle the shredded cheddar and mozzarella cheese evenly on top.
  6. Fry Tacos: Place the assembled tacos back in the frying pan and cook for 2 minutes on each side until the tortillas are golden, crispy, and the cheese has melted.
  7. Garnish and Serve: Remove the tacos from the pan, scatter the chopped cilantro over them, and serve immediately with extra sour cream on the side for dipping.

Notes

  • For crispier tacos, gently press them with a spatula while frying to ensure full contact with the pan for an even golden crust.
  • Adjust the spice level by increasing or decreasing the cayenne pepper and consider adding diced jalapeños for extra heat; note that the buffalo sauce also contributes spiciness.
  • To make vegan, substitute the sour cream and cheese with plant-based alternatives like vegan sour cream and vegan shredded cheese.
  • The bean mixture can be prepared in advance and stored in the refrigerator for up to 3 days. Assemble and fry the tacos fresh before serving for best texture.
