Instructions

  1. Prep the Butternut Squash: Peel and dice the small butternut squash into ½ inch cubes to yield about 2 ½ cups of diced squash.
  2. Arrange in Baking Dish: In a 9×13 baking dish, place the diced butternut squash, peeled garlic cloves, and the block of feta cheese in the center. Drizzle with olive oil and sprinkle with dried thyme, kosher salt, and black pepper evenly over the ingredients.
  3. Roast the Veggies and Feta: Roast the baking dish in the oven preheated to 400°F for 30 to 35 minutes, or until the squash is tender and the feta cheese turns golden and slightly browned on top.
  4. Cook the Pasta: Meanwhile, bring a pot of salted water to a boil and cook the pasta until al dente according to package instructions. Reserve ½ cup of pasta cooking water before draining the pasta.
