Delightfully sweet and chewy Butterscotch Marshmallow Bars combining rich butterscotch chips, creamy peanut butter, and fluffy miniature marshmallows. These no-bake treats are easy to prepare and perfect for snacking or sharing at gatherings.

Ingredients

Ingredients

  • ½ cup (1 stick / 113 g) unsalted butter
  • 2 cups (340 g) butterscotch chips
  • ¾ cup (190 g) creamy peanut butter
  • 4 cups (200 g) miniature marshmallows

Instructions

  1. Prepare the pan: Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal later. Set aside.
  2. Melt the mixture: In a large microwave-safe bowl, combine butter, butterscotch chips, and peanut butter. Microwave in 30-second intervals, stirring after each, until the mixture is smooth and fully melted, about 1 to 1 ½ minutes total.
  3. Cool the mixture: Let the melted mixture sit at room temperature for 10 to 15 minutes. This step helps prevent the marshmallows from melting when added.
  4. Add marshmallows: Gently fold in the miniature marshmallows until they are fully coated with the butterscotch-peanut butter mixture.
  5. Set the bars: Transfer the mixture to the prepared pan and press it down into an even layer using a spatula. Refrigerate for at least 2 hours or until the bars are firm and set.
  6. Serve: Lift the bars out of the pan using the parchment paper overhang and cut into squares. Enjoy!

Notes

  • For easier removal, make sure to leave parchment paper overhang on both sides of the pan.
  • Ensure the melted mixture is not too hot before adding marshmallows to prevent them from melting.
  • You can substitute peanut butter with almond or sunflower butter if desired.
  • Store bars in an airtight container in the refrigerator for up to one week.
