These Caramel Turtle Rice Krispie Treats combine the classic crispiness of Rice Krispies with rich, velvety layers of caramel, chocolate, and toasted pecans, creating a decadent and irresistible dessert bar perfect for any occasion.

Ingredients

Rice Krispie Layer

  • 6 cups Rice Krispie Cereal
  • 1 14-16 oz. bag mini marshmallows (reserve some for topping decoration)
  • 6 Tablespoons butter
  • 1 teaspoon vanilla extract (optional)

Caramel Layer

  • 14 oz. caramels (about 45 little caramel squares)
  • 1/2 cup heavy cream or evaporated milk (divided)

Chocolate and Topping

  • 6 oz Chocolate chips plus more for topping decoration
  • 1 cup chopped pecans, toasted (optional, for more flavor)

Instructions

  1. Prepare the Pan: Grease a 9×13 inch pan or line it with parchment paper to prevent sticking. This will serve as the base for forming your Rice Krispie layer.
  2. Melt Marshmallow Mixture: In a large pot, melt the butter and mini marshmallows over medium-low heat, stirring constantly to avoid scorching. Continue until the mixture is smooth and fully combined.
  3. Combine with Rice Krispies: Remove from heat, stir in the Rice Krispie cereal until evenly coated. Press this mixture firmly and evenly into the prepared pan to form the base layer.
  4. Melt Caramel Layer: Using a double boiler, melt the caramels, vanilla extract (if using), and 1/4 cup of heavy cream over medium heat. Stir frequently until smooth and creamy, about 10 minutes.
  5. Pour Caramel Over Base: Pour the melted caramel evenly over the Rice Krispie base. Place the pan in the refrigerator for about 5 minutes to help the caramel set slightly.
  6. Melt Chocolate Layer: In a microwave-safe bowl, combine the chocolate chips and remaining 1/4 cup heavy cream. Microwave on medium power for about 1 minute, stirring halfway through until smooth and glossy.
  7. Spread Chocolate and Add Toppings: Spread the melted chocolate evenly over the caramel layer. Immediately sprinkle toasted chopped pecans and additional chocolate chips over the chocolate layer for texture and decoration.
  8. Drizzle Remaining Caramel and Chocolate: Optionally, drizzle any leftover caramel and chocolate over the top for a decorative finish.
  9. Chill and Serve: Refrigerate the completed treats until fully set. Once firm, cut into squares and serve chilled for a delicious caramel turtle experience.

Notes

  • Using parchment paper makes removal easier and cleanup faster.
  • To toast pecans, spread them on a baking sheet and bake at 350°F (175°C) for about 5-7 minutes, stirring once.
  • You can substitute evaporated milk for heavy cream to reduce richness slightly.
  • For extra flair, add a pinch of sea salt on top to contrast the sweetness.
  • Store in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
