Ingredients

Oatmeal Base

  • 1 Cup steel-cut oats
  • 4 Cups milk, any kind
  • 1 Cup carrots, finely grated
  • ½ Cup raisins
  • ⅓ Cup walnuts or pecans, chopped
  • ¼ Cup shredded coconut
  • ¼ Cup packed brown sugar
  • 2 Tablespoons unsalted butter
  • 2 Teaspoons ground cinnamon
  • ¼ Teaspoon ground ginger
  • ¼ Teaspoon ground nutmeg
  • Pinch ground cloves
  • Nonstick cooking spray, as needed

Optional Garnishes

  • Extra raisins
  • Chopped nuts
  • Shredded coconut
  • Cream or milk

Instructions

  1. Prepare the slow cooker: Spray the bottom of the insert of a 5-quart or larger slow cooker generously with nonstick cooking spray to prevent the oatmeal from sticking during the long cooking process.
  2. Combine ingredients: Add the steel-cut oats, milk, finely grated carrots, raisins, chopped nuts, shredded coconut, brown sugar, unsalted butter, and ground spices (cinnamon, ginger, nutmeg, cloves) into the slow cooker. Stir well to combine all the ingredients evenly.
  3. Cook the oatmeal: Cover the slow cooker with its lid and cook on the high setting for 3 to 4 hours or on the low setting for 6 to 8 hours, until the oats are tender and fully cooked through. If the oatmeal becomes too thick during cooking, add additional milk to achieve your desired consistency.
  4. Adjust and serve: Taste the oatmeal and adjust the sweetness if needed. Serve the hot oatmeal with a splash of milk or cream on top and any optional garnishes like extra raisins, chopped nuts, shredded coconut, or your favorite toppings.
