A creamy and indulgent keto-friendly cauliflower au gratin featuring layers of tender cauliflower, Swiss Gruyere cheese, green onions, and rich heavy cream baked to golden perfection. This low-carb comfort dish is perfect as a side or a satisfying vegetarian main.

Ingredients

Vegetables

  • 1 head cauliflower (or 4 cups), sliced thin
  • 4 green onions, sliced

Dairy

  • 2 cups Swiss Gruyere cheese, shredded (or just Swiss cheese as a substitute)
  • 1 ½ cups heavy cream

Seasoning

  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 375°F. Spray an 8×10 inch casserole dish with cooking spray to prevent sticking and set it aside for assembling the layers.
  2. Layer the Cauliflower: Slice the cauliflower into thin slices. Lay down half of the cauliflower slices in an even layer in the prepared baking dish. This typically makes about two layers.
  3. Add Cheese and Onions: Sprinkle half of the shredded Gruyere cheese evenly over the cauliflower layer. Then scatter all the sliced green onions evenly on top. Season this layer with salt and black pepper to your taste.
  4. Second Cauliflower Layer: Add the remaining cauliflower slices, layering them evenly over the cheese and onions.
  5. Pour Cream and Top with Cheese: Pour all of the heavy cream evenly over the layered cauliflower. Then top with the rest of the shredded Gruyere cheese to create a creamy, cheesy topping.
  6. Bake Covered: Cover the dish tightly with foil and bake in the preheated oven for 30 minutes to let the cauliflower soften and the flavors meld.
  7. Bake Uncovered: Remove the foil and continue baking for an additional 40 minutes or until the cauliflower is fork tender and the cheese is bubbly and golden brown on top. Check periodically as baking time can vary slightly.
  8. Rest and Serve: Let the dish sit for 5 minutes after removing from the oven to allow the sauce to thicken. Serve warm. Store leftovers in an airtight container in the refrigerator.
