Charred Cabbage with Creamy Miso Mushrooms is a flavorful vegetarian dish featuring perfectly roasted green cabbage wedges paired with a luscious, savory miso cream sauce coating tender mixed mushrooms. The cabbage is either oven-charred or skillet-seared for a smoky, crispy exterior and tender inside, while mushrooms are roasted to bring out their natural umami, then tossed in a rich garlic, miso, and cream sauce. This dish makes an elegant side or vegetarian main with a balance of textures and deep, comforting flavors.

Ingredients

Cabbage

  • 8 green cabbage wedges, about 1¾” thick with core intact (half a head of cabbage)
  • Neutral oil, for drizzling
  • Salt and pepper, to taste

Miso Creamy Mushrooms

  • 1 lb (450g) mixed mushrooms (enoki, shimeji, black oyster, king trumpet oyster, shiitake, cremini, etc.)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • ½ cup (120 ml) water
  • ¼ cup (60 ml) heavy cream
  • 2 tbsp white or yellow miso paste
  • ¼ tsp soy sauce
  • Chopped chives, for garnish

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) and line two baking sheets with parchment paper, one for mushrooms and one for cabbage. If using the pan-fry method for cabbage, only one sheet pan is necessary.
  2. Prepare Mushrooms: Spread the mixed mushrooms evenly on one baking sheet. Toss with neutral oil lightly to coat, but do not salt or season them to avoid moisture loss and ensure proper browning during roasting.
  3. Prepare Cabbage (Oven Method): Arrange cabbage wedges on the second baking sheet. Drizzle with oil generously and season all sides evenly with salt and pepper by rubbing. This oil coating prevents dryness and encourages charring.
  4. Roast Vegetables: Place both trays in the oven timing mushrooms so both finish around the same time. Roast cabbage for 25 to 30 minutes, flipping once halfway through, until outer edges are nicely charred and the centers pierce tender. Roast mushrooms for 20 minutes, tossing once halfway, until edges are seared and browned.
  5. Prepare Cabbage (Stovetop Option): Heat a large skillet over medium to medium-high heat and drizzle in oil. Place 4 cabbage wedges spaced in the pan. Pour ¼ cup water and cover to steam approximately 4 minutes until mostly evaporated and wedges are tender when pierced. Uncover and let cabbage sear until golden brown, then carefully flip with spatula and tongs to sear the other side. Repeat with remaining wedges.
  6. Make Creamy Miso Sauce: In a medium pot or the skillet used for cabbage, melt butter over medium-low heat. Sauté minced garlic for a few seconds until lightly golden. Quickly whisk in water and miso paste until smooth. Add heavy cream and soy sauce, bringing mixture to a gentle simmer, ensuring it does not boil vigorously.
  7. Toss Mushrooms in Sauce: Combine the roasted mushrooms into the creamy miso sauce, stirring gently to coat all mushrooms evenly and infuse flavor.
  8. Serve: Plate the cabbage wedges and spoon the creamy miso mushrooms generously over the top. Garnish with chopped chives for fresh color and flavor.

Notes

  • Make-ahead tip: Roast mushrooms in advance and reheat them in the sauce right before serving for ease at dinner parties.
  • Cabbage wedges can also be roasted or pan-fried in advance and gently reheated in the oven, ideally slightly undercooked initially to prevent over-softening while reheating.
  • Assemble by pouring creamy miso mushrooms over cabbage wedges and garnishing just before serving to keep textures vibrant.
