Ingredients

Seasoning Mix

  • 1 1/2 tsp dried dill weed
  • 1 tsp dried parsley
  • 3/4 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp Kosher salt
  • 1/2 tsp freshly ground pepper

Main Ingredients

  • 1 medium head of cauliflower, cut into 1-inch florets
  • 2 to 3 tbsp olive oil
  • 1 cup (113 g) shredded cheddar cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 400ºF (204ºC) to prepare it for roasting the cauliflower evenly.
  2. Mix Seasoning: In a large bowl, combine dried dill weed, dried parsley, garlic powder, onion powder, kosher salt, and freshly ground pepper to create the ranch-style seasoning blend.
  3. Prepare Cauliflower: Lay the cauliflower florets in a single layer on a rimmed baking sheet. Drizzle them with olive oil and sprinkle the prepared seasoning mix over the cauliflower, tossing gently to ensure all pieces are well coated.
  4. Roast Cauliflower: Place the baking sheet in the preheated oven and roast the cauliflower for about 20 minutes, or until the florets are tender and golden brown, stirring or turning once if desired for even browning.
  5. Add Cheese and Melt: Turn off the oven. Sprinkle the shredded cheddar cheese evenly over the roasted cauliflower. Return the baking sheet to the oven for about 5 minutes, or until the cheese is melted, bubbly, and slightly golden.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Rewarm gently in the oven or microwave to preserve texture and flavor.
  • Variation: For a spicier kick, consider adding a pinch of cayenne pepper to the seasoning blend.
  • Cheese Alternatives: Substitute cheddar cheese with mozzarella or a dairy-free cheese for dietary preferences.
