This Cheesy Keto Cauliflower Au Gratin is a rich, creamy, and low-carb twist on the classic comfort food. Featuring tender cauliflower slices baked in a decadent Gruyere cheese sauce with green onions, it’s perfect for those following a keto diet or anyone looking for a delicious, cheesy cauliflower dish. The recipe is easy to prepare, combining heavy cream and Swiss Gruyere cheese to create a luscious, golden-brown topping that is both satisfying and nutritious.

Ingredients

Vegetables

  • 1 head cauliflower (or 4 cups), cut in slices
  • 4 green onions, sliced

Dairy

  • 2 cups Swiss Gruyere cheese, shredded (can substitute with Swiss cheese)
  • 1 ½ cups heavy cream

Seasonings

  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Spray a baking dish with cooking spray to prevent sticking and set it aside.
  2. Slice and layer cauliflower: Thinly slice the cauliflower and add about half of it in a layer to the prepared baking dish. This layering will create the base of your au gratin.
  3. Add cheese and onions: Sprinkle half of the shredded Gruyere cheese evenly over the cauliflower layer. Then evenly distribute all the sliced green onions on top. Season with salt and black pepper to taste.
  4. Layer remaining cauliflower: Add the remaining cauliflower slices evenly over the cheese and green onion layer, creating another layer.
  5. Add cream and remaining cheese: Pour the heavy cream evenly over the layered cauliflower. Finally, top with the remaining shredded cheese.
  6. Bake covered: Cover the baking dish tightly with aluminum foil and place it in the preheated oven. Bake for 30 minutes to let the cauliflower cook through and flavors meld.
  7. Bake uncovered: Remove the foil and continue baking for 40 minutes, or until the cauliflower is fork-tender and the cheese on top is golden brown and bubbly. Monitor periodically to avoid burning.
  8. Let rest and serve: Remove from the oven and let the dish sit for 5 minutes to thicken and set. Serve warm and enjoy!

  • Gruyere cheese provides a creamy, luxurious flavor, but if unavailable, Swiss cheese can be used alone.
  • Sharp cheddar cheese is an alternative, though it changes the flavor profile.
  • If you find the dish too soupy, reduce heavy cream to 1 cup; it still works well but with slightly less creaminess.
  • Store leftovers in an airtight container and refrigerate.
