Ingredients

Fresh Herbs and Vegetables

  • 2-3 handfuls fresh spinach
  • Bunch fresh basil (7-8 leaves)
  • ¼ cup fresh parsley
  • ½ cup peas (optional)

Dairy and Dairy Alternatives

  • ⅓ cup parmesan cheese
  • ¾ cup non-dairy milk (such as almond or oat milk)

Oils and Seasonings

  • 2 garlic cloves
  • 2 tbsp avocado oil or olive oil
  • ½ tsp onion powder
  • ½ tsp salt (optional if serving to baby)
  • ¼ tsp ground black pepper
  • 1 tbsp lemon juice (optional)

Instructions

  1. Cook the pasta: Bring a large pot of water to a boil and cook the pasta according to the package instructions until al dente, then drain and set aside.
  2. Blend the sauce ingredients: In a high-speed blender or food processor, combine spinach, basil leaves, parmesan cheese, parsley, non-dairy milk, garlic, avocado or olive oil, onion powder, salt (if using), and freshly ground black pepper. Blend until you achieve a smooth and creamy consistency.
  3. Simmer the sauce: Pour the blended sauce into a large skillet over medium heat. Let it simmer gently for about 3-5 minutes, stirring occasionally to meld the flavors and slightly thicken the sauce. Add the optional peas at this stage if desired.
  4. Adjust consistency: If the sauce is too thick, add a little more non-dairy milk to thin it out. If too thin, continue to simmer for a few more minutes until you reach the desired thickness.
  5. Serve: Once the sauce has reached the perfect consistency, pour it over your cooked pasta and toss gently to coat evenly.
  6. Store leftovers: Allow any leftover sauce to cool completely before transferring it to an airtight container. Refrigerate for up to 3-4 days or freeze in portioned Souper Cubes for 2-3 months.

Notes

  • Kid-friendly pasta shapes to try include rotini, fusilli, spaghetti, ditalini, star pasta, or alphabet pasta.
  • To make the sauce vegan, substitute parmesan cheese with a vegan cheese alternative.
  • For gluten-free diets, choose gluten-free pasta varieties like brown rice, quinoa, or chickpea pasta.
  • Boost protein by blending in cottage cheese, cooked chickpeas, white beans, or tofu, or by adding cooked chicken pieces.
  • Taste the sauce before serving to adjust seasoning; add salt and pepper gradually since cheese contributes saltiness.
