Cherry Clafoutis is a classic French dessert featuring fresh cherries baked in a light, custard-like batter. This simple yet elegant dish combines the sweetness of ripe cherries with a tender, golden baked batter, perfect for a delightful treat or dessert any time of year.

Ingredients

Cherries

  • 3 1/2 cups fresh cherries, stemmed and pitted
  • unsalted butter, to grease the baking dish
  • 1 1/2 tbsp granulated sugar

Clafoutis Batter

  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup all-purpose flour
  • pinch salt
  • 2 tbsp unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1 cup milk
  • powdered sugar, for dusting

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (177°C). Butter a 9-inch (23 cm) pie plate thoroughly and sprinkle granulated sugar evenly on top to prevent sticking and add a slight caramelized texture.
  2. Prepare the Cherries: Wash and dry the cherries, then remove the stems. Remove the pits one-by-one using a cherry pitter or by pushing out the pits using a chopstick into the mouth of an empty bottle. This ensures the cherries are pitted without damaging their shape.
  3. Arrange Cherries: Place the prepared cherries in a single snug layer in the buttered and sugared baking dish to ensure even distribution and baking.
  4. Make the Batter: In a medium bowl or blender, beat together the eggs, granulated sugar, salt, vanilla extract, and almond extract until smooth. Mix in the melted, cooled butter, then incorporate the all-purpose flour gradually until combined and smooth. Finally, mix in the milk to create a smooth batter.
  5. Combine and Bake: Pour the batter evenly over the cherries in the baking dish. Place the dish in the preheated oven and bake for 40 to 45 minutes, or until the clafoutis is puffed and golden around the edges, indicating it is cooked through.
  6. Cool and Serve: Remove the clafoutis from the oven and allow it to cool for 20 to 30 minutes so it firms up properly. Dust with powdered sugar before slicing into wedges and serving for a beautiful finish.

Notes

  • If fresh cherries are unavailable, you can substitute with other fruits such as blueberries, pears, sliced peaches, sliced apples, raspberries, strawberries, blackberries, sliced apricots, or plums.
  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend on a 1:1 ratio to ensure the dessert remains safe for gluten sensitivities.
