These Cherry Rice Krispie Treats combine classic marshmallow and cereal with a sweet twist of cherry gelatin and a rich dark chocolate drizzle. Perfectly chewy and easy to make, these bars are an ideal summer treat or festive holiday dessert.

  • 6 Tablespoons unsalted butter
  • 16 ounce package mini marshmallows
  • 1 ½ Tablespoon cherry gelatin powder (JELL-O, not sugar free)
  • 6 cups Rice Krispies cereal

Topping

  • 10 ounce Ghirardelli dark chocolate melting wafers, melted
  • Sprinkles, optional

Instructions

  1. Melt Butter and Marshmallows: In a large saucepan over low heat, melt the butter and mini marshmallows together. Stir constantly to prevent burning and ensure the marshmallows become completely smooth and melted.
  2. Add Gelatin Powder: Stir in the cherry gelatin powder until it is fully incorporated and the mixture is smooth and evenly colored.
  3. Combine with Cereal: Fold the Rice Krispies cereal gently into the marshmallow mixture, making sure the cereal is fully coated without crushing it.
  4. Press into Pan: Butter a 13×9-inch baking dish and press the mixture firmly and evenly into the pan. For thicker treats, use a 9-inch square pan instead.
  5. Drizzle Chocolate: Spread or drizzle the melted dark chocolate wafers evenly over the top of the pressed mixture.
  6. Set and Cut: Allow the treats to set at room temperature for about one hour until the chocolate topping is firm. Cut into 16 squares and serve.
  7. Storage: Store the treats in a covered container at room temperature to maintain freshness.

Notes

  • Sugar free gelatin does not work well in this recipe as it affects texture and flavor.
  • Ghirardelli dark chocolate melting wafers are recommended for best flavor and smooth texture when melting.
  • For thicker treats, use a smaller 9-inch square pan instead of the 13×9-inch baking dish.
  • Adding sprinkles on top of the chocolate drizzle is optional and great for holiday decoration.
