Ingredients

Burger Patties

  • ¼ cup white onion, grated with moisture squeezed out
  • 2 tablespoons cold butter (regular or plant-based)
  • 1 pound ground chicken
  • 2 tablespoons mayonnaise
  • 2 tablespoons parmesan cheese, finely shredded
  • 2 teaspoons garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon lemon zest
  • ½ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 4 slices provolone cheese (or substitute white American or dairy-free cheese)

Toppings and Assembly

  • 4 hamburger buns of your choice (regular or gluten-free)
  • 1 tablespoon butter (optional, for grilling buns)
  • Romaine lettuce leaves
  • Homemade Caesar dressing or dairy-free Caesar dressing
  • Red onion slices
  • Parmesan cheese, shaved
  • Croutons, crushed

Instructions

  1. Prepare Ingredients: Grate the white onion over layers of paper towel and squeeze out excess moisture gently. Using the same grater, shred the cold butter into small flakes.
  2. Mix Burger Patties: In a large bowl, combine the grated onion, shredded butter, ground chicken, mayonnaise, parmesan cheese, minced garlic, Worcestershire sauce, Dijon mustard, lemon zest, kosher salt, and black pepper. Mix gently but thoroughly until ingredients are well incorporated.
  3. Form Patties: Line a baking sheet or plate with parchment paper. Divide the mixture into 4 equal portions and shape them into patties about ½ to ¾ inch thick. Press your thumb into the center of each patty to make a slight indent, which helps them cook evenly. Place the patties in the freezer for 20 minutes to set.
  4. Preheat Grill: Ensure the grill grates are clean and preheat the grill to medium-high heat.
  5. Grill Burgers: Place the patties over direct heat on the grill and close the lid. Cook for 5–6 minutes on each side or until the internal temperature reaches 165°F, using a meat thermometer to check. During the last 1–2 minutes, top each patty with a slice of provolone cheese to melt. Remove the burgers and let them rest for 5 minutes.
  6. Grill Buns (Optional): If desired, butter each side of the hamburger buns and place butter-side down on the grill for 30–60 seconds until grill marks appear. Remove carefully.
  7. Assemble Burgers: On the bottom bun, place a lettuce leaf, spread a layer of Caesar dressing, then add the chicken burger. Add more Caesar dressing on top, followed by red onion slices, additional lettuce, shaved parmesan, and crushed croutons. Place the top bun to finish.
  8. Serve: Serve immediately with your favorite side dishes and enjoy your delicious Chicken Caesar Burger.
