This comforting Chicken Cobbler combines tender shredded rotisserie chicken with mixed vegetables, all topped with a rich Cheddar Bay biscuit crust. The casserole is baked until golden and bubbly, then rested to develop a thick, savory sauce— perfect for an easy yet hearty family meal.

Ingredients

Base

  • 1/2 cup (1 stick) butter, melted
  • 4 cups rotisserie chicken, shredded
  • 1 (12 ounce) bag frozen mixed vegetables

Topping

  • 1 (11.36 ounce) package Red Lobster Cheddar Bay Biscuit Mix
  • Seasoning packet from biscuit mix
  • 2 cups whole milk

Sauce

  • 1 (10.5 ounce) can cream of chicken soup
  • 2 cups low-sodium chicken broth
  • 1/8 tsp black pepper
  • 2 tsp Better Than Bouillon Roasted Chicken Base

Optional Garnish

  • 2 tbsp fresh chopped parsley

Instructions

  1. Preheat Oven: Set your oven to 375°F (190°C) to prepare for baking the cobbler.
  2. Prepare Butter Base: Melt the butter in the microwave and pour it evenly into a 9×13-inch baking dish, spreading it to coat the bottom.
  3. Layer Chicken and Vegetables: Spread the shredded rotisserie chicken in a single layer over the melted butter. Then evenly layer the frozen mixed vegetables on top. Do not stir or mix layers.
  4. Mix and Add Biscuit Topping: In a medium bowl, combine the Cheddar Bay Biscuit Mix, seasoning packet, and whole milk. Stir until fully blended, then carefully pour this mixture evenly over the chicken and vegetables. Spread gently without mixing.
  5. Prepare and Pour Sauce: Whisk together cream of chicken soup, chicken broth, black pepper, and Better Than Bouillon until smooth and well combined. Ensure the bouillon is fully dissolved. Pour this mixture evenly over the biscuit topping. Do not stir.
  6. Bake the Cobbler: Place the dish uncovered in the oven and bake for 55 to 65 minutes, until the top is very golden brown. The center may appear runny at first.
  7. Rest Before Serving: Remove from oven and allow the cobbler to stand for 10 to 15 minutes. This resting period lets the sauce thicken to a gravy-like consistency.
  8. Garnish and Serve: Optionally, sprinkle fresh chopped parsley on top before serving to add a fresh, vibrant finish.

Notes

  • Cook until the biscuit topping is VERY golden brown, approximately 65 minutes.
  • Let the casserole rest about 15 minutes after baking; the sauce will thicken as it cools to a perfect gravy consistency.
  • For a cheesier topping, add 1/2 cup shredded cheddar cheese into the biscuit mix before pouring over the chicken and vegetables.
