Chicken Madeira is a savory and elegant dish featuring tender seared chicken breasts topped with a rich Madeira wine sauce, sautéed mushrooms, tender asparagus, and melted mozzarella cheese. This recipe combines robust flavors with creamy textures, perfect for a special dinner or weekend feast.

Ingredients

Sauce

  • 1 cup chicken broth
  • ½ cup beef broth
  • ½ chicken bouillon cube
  • 1 tablespoon heavy cream (optional)
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon onion powder
  • ½ teaspoon mustard powder

Chicken

  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • ¼ cup flour
  • 1-2 tablespoons olive oil

Mushrooms, Asparagus, and Cheese

  • 12 spears asparagus
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1 ½ cups Madeira wine
  • 8 oz cremini or baby bella mushrooms
  • 3 tablespoons flour
  • 2 tablespoons grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prep Work: Combine the chicken broth, beef broth, bouillon cube, heavy cream, Worcestershire sauce, onion powder, and mustard powder in a large measuring cup with a spout; set aside. Take the mozzarella cheese out to bring it to room temperature for easy melting. Measure all remaining ingredients before starting.
  2. Cook the Asparagus: Trim and cut the asparagus in half. Boil them in water for 3-4 minutes until tender but crisp. Drain and rinse under cold water to stop cooking, then set aside.
  3. Prepare the Chicken: Slice each chicken breast in half lengthwise to make thinner pieces. Cover with plastic wrap and gently pound with a meat mallet to ½ inch thickness. Pat dry with paper towels.
  4. Season and Coat the Chicken: Season both sides with salt and pepper. Mix garlic powder with flour and thoroughly coat each chicken piece on all sides, pressing the flour mixture into every part.
  5. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Cook the chicken in batches for 4-5 minutes per side until golden brown and cooked through. Remove chicken and set aside.
  6. Make the Sauce: Turn the heat off. Add butter and minced garlic to the skillet, then turn heat to medium and cook, stirring continuously for 2 minutes. Pour in Madeira wine, scraping the bottom and sides of the pan to loosen browned bits.
  7. Cook Mushrooms: Add mushrooms to the sauce and bring to a gentle bubble. Reduce heat and cook until liquid is reduced by half, about 13 minutes. At this point, preheat oven to 400°F if using for melting cheese.
  8. Thicken the Sauce: Gradually sprinkle in 3 tablespoons flour while whisking constantly to prevent lumps. Cook and stir for 2 minutes to eliminate raw flour taste.
  9. Add Sauce Mixture: Slowly add the reserved sauce mixture (from step 1), stirring continuously. Bring to a boil, then reduce heat to a simmer. Let simmer uncovered for 13 minutes until sauce thickens and flavors concentrate.
  10. Finish Sauce and Cheese: Reduce heat to low and stir in Parmesan cheese until melted and incorporated.
  11. Combine & Melt Cheese: Return chicken to skillet and spoon sauce over it. Top with asparagus and shredded mozzarella cheese. Cover and cook over medium-low heat until cheese melts, about 5 minutes. Alternatively, place skillet in preheated 400°F oven for 4 minutes to melt cheese.
  12. Serve: Serve the Chicken Madeira hot, ideally alongside creamy mashed potatoes for a complete meal.

Notes

  • Using heavy cream in the sauce adds richness but is optional.
  • Madeira wine gives the dish its classic flavor; substitute with dry sherry if unavailable.
  • Pre-melting the mozzarella at room temperature helps it melt evenly and quickly.
  • If you don’t have a meat mallet, a rolling pin or heavy pan can be used to pound chicken thin.
  • Covering the skillet during cheese melting retains moisture and prevents overcooking chicken.
  • For a gluten-free version, substitute the flour with a gluten-free all-purpose blend or cornstarch.
