Ingredients

Chickpea Fries

  • 2 cups water
  • 1 1/2 cups chickpea flour
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1/2 tsp fresh cracked pepper
  • 1/2 cup olive oil
  • Vegetable oil for frying
  • Parsley and sea salt for garnish

Yogurt Tahini Sauce

  • 1 cup Greek style yogurt
  • 1/2 cup tahini
  • Juice of 1 lemon
  • 1 clove garlic, minced
  • Salt to taste

Instructions

  1. Prepare the Pan: Line the pan or pans with plastic wrap or parchment paper, allowing the ends to extend over the sides so you can easily lift out the chilled dough for cutting.
  2. Mix Dry Ingredients: Whisk together the chickpea flour, salt, cayenne pepper, cumin, and fresh cracked pepper in a bowl.
  3. Cook Chickpea Batter: In a saucepan, heat the water and olive oil to boiling. Reduce heat and slowly whisk in the chickpea flour mixture. Stir continuously until it thickens and becomes smooth, about one minute, resembling thick oatmeal.
  4. Set the Batter: Spread the chickpea mixture evenly in the prepared pan, smoothing the surface with a spatula. Place another piece of parchment paper over the top and smooth out as evenly as possible.
  5. Chill the Dough: Refrigerate the mixture for 2-3 hours until fully set and firm, similar in texture to polenta.
  6. Make the Yogurt Tahini Sauce: While the dough chills, whisk together Greek yogurt, tahini, lemon juice, minced garlic, and salt in a small bowl. Chill until ready to serve. For a thinner consistency, add a little water as needed.
  7. Cut the Fries: Once the dough is fully chilled, carefully lift it out of the pan using the overhanging parchment. Cut into strips approximately 1/4 inch by 4 inches for matchstick style or 1/2 inch by 4 inches for thicker fries.
  8. Heat Oil for Frying: Pour about 1/2 inch of vegetable oil into a pot or skillet and heat to 350-360°F. Allow time for the oil to reach the correct temperature to ensure crispy fries.
  9. Fry the Chickpea Fries: Fry the chickpea strips in batches, avoiding overcrowding. If the oil is at the right temperature, the fries will turn golden in about 2 minutes. Remove and drain on paper towels.
  10. Garnish and Serve: Season the fries with fresh ground sea salt and dust with parsley. Serve immediately with the chilled lemon tahini dipping sauce.

Notes

  • Ensure the oil is hot enough (350-360°F) before frying to achieve crispiness without greasiness.
  • Chilling the chickpea dough thoroughly is essential for clean cutting and proper frying texture.
  • You can adjust the cayenne pepper for more or less heat according to your preference.
  • The dipping sauce can be thinned with water if a lighter consistency is preferred.
  • These fries are best served fresh and hot for optimal crispness.
