Enjoy them on their own or with your favorite dip for a nutritious snack or light meal.

Ingredients

Main Ingredients

  • 2 cans (15 oz each) chickpeas or 3 cups cooked chickpeas
  • 4 tablespoons all-purpose flour
  • ¼ cup grated parmesan or nutritional yeast
  • 3 tablespoons parsley, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, pressed, minced, or grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 tablespoons water
  • ½ teaspoon salt
  • 2 twists black pepper

Instructions

  1. Prepare the mixture: Add all ingredients to a large mixing bowl. Coarsely mash with a fork or potato masher until the mixture sticks together and can form patties. Add more water gradually if necessary to achieve the right consistency.
  2. Shape the patties: Form the mixture into 12 small chickpea patties, ensuring they hold their shape but are not too sticky.
  3. Choose a cooking method:
    a) Oven-bake: Preheat oven to 400°F (200°C). Arrange patties on a prepared baking sheet, brush with olive oil, and bake for 20 to 25 minutes until golden brown.
    b) Pan-fry: Heat 2 tablespoons olive oil in a non-stick skillet over medium heat. Cook patties 3 minutes per side, turning gently with a spatula.
    c) Air-fry: Brush air fryer bottom with oil to prevent sticking. Arrange patties in a single layer, brush with olive oil, and air fry at 400°F (200°C) for about 15 minutes until golden brown.
  4. Serve: Arrange fritters on a serving platter, garnish with fresh parsley, and add a squeeze of fresh lemon juice. Serve with your favorite dip or sauce.

Notes

  • Substitutions: Use canned or home-cooked dried chickpeas. Substitute chickpea flour for all-purpose flour to make gluten-free. Replace parmesan with nutritional yeast for a vegan version. Use dried oregano or Italian herbs instead of cumin and coriander.
  • Tips: Add water gradually to reach an easy-to-shape but not sticky consistency. Making smaller fritters ensures even cooking and easier serving. Adjust salt carefully since canned chickpeas contain sodium.
  • Storage: Store raw fritters in the fridge for up to 4 days, cooked fritters for 3 days. Freeze raw or cooked fritters up to 3 months. Reheat from frozen in oven or air fryer.
