This Chickpea Omelette is a delicious and nutritious vegan alternative to traditional eggs, made with chickpea flour and seasoned with optional nutritional yeast and black salt to mimic an authentic egg-like flavor. Packed with sautéed vegetables and cooked to perfection in a skillet, this easy-to-make omelette is perfect for a wholesome breakfast or light meal.

Ingredients

Batter

  • 1/4 cup chickpea flour
  • 1/3 cup water
  • 1 tablespoon nutritional yeast (optional)
  • 1/4 teaspoon salt (black salt recommended for egg-like flavor)

Fillings and Cooking

  • 1/4 cup vegetables of choice (diced)
  • 1 tablespoon oil (for frying)
  • Optional toppings: shredded vegan cheese, baby spinach, sautéed mushrooms

Instructions

  1. Mix Dry Ingredients: In a mixing bowl, combine chickpea flour, nutritional yeast, and salt. Stir thoroughly to blend all dry ingredients evenly.
  2. Add Water: Pour in half of the water and stir until you achieve a smooth paste. Then add the remaining water, stirring again until the batter is smooth and free of lumps. Set aside while preparing the vegetables.
  3. Prepare Vegetables: Dice your chosen vegetables to roughly 1/4 cup per omelette. This can include bell peppers, onions, mushrooms, or any preferred veggies.
  4. Sauté Vegetables: Heat oil in a well-seasoned iron skillet or non-stick frying pan over medium-low heat. Sauté the diced vegetables for 3-5 minutes until they soften but are not browned. Remove them from the skillet and fold them into the chickpea batter.
  5. Cook Omelette Base: Increase heat to medium. Pour the batter into the skillet, spreading it like a large pancake. Cook for about 5 minutes until the top surface appears set and no longer wet. Optionally, cover the skillet with a lid for 1-2 minutes to aid even cooking.
  6. Flip and Finish Cooking: Using a spatula, carefully loosen and flip the omelette. Cook for an additional 3-5 minutes until the center is firm and fully cooked through, avoiding any wet batter in the middle.
  7. Add Toppings and Serve: Place vegan cheese and optionally a handful of baby spinach or additional sautéed vegetables on half of the omelette. Fold it over to enclose the filling. Allow cheese to melt slightly before serving hot.

Notes

  • Black salt (kala namak) adds a sulfurous, egg-like flavor that elevates the chickpea omelette.
  • Use a well-seasoned iron skillet or non-stick pan to prevent sticking and facilitate flipping.
  • Feel free to customize vegetables and add your favorite vegan cheese or herbs for extra flavor.
  • Cooking times may vary depending on pan heat and thickness of the omelette.
  • This recipe serves one but can be easily multiplied for more servings.
