Ingredients

Beef Mixture

  • 1 Pound Ground Beef
  • 1 Small Yellow Onion, finely diced
  • 1 Teaspoon Garlic Powder
  • ½ Teaspoon Ground Black Pepper

Filling

  • 2 Cans Chili (I used Amy’s Medium Vegetarian Chili)
  • ½ Cup Cheddar Cheese, finely grated (for mixing into the filling)

Tacos

  • 8 Flour Tortillas, taco or fajita size
  • ¾ Cup Cheddar Cheese, finely grated (for topping)
  • Cooking Spray (for spraying tops of tortillas)
  • Chopped Parsley (for garnish)

Instructions

  1. Preheat Oven and Prepare Skillet: Preheat your oven to 400°F (204°C). While the oven is heating, place a large skillet on the stovetop over medium heat to warm up.
  2. Brown the Ground Beef: Once the skillet is hot, add the ground beef and cook without stirring for 3-4 minutes until it begins to brown on one side.
  3. Sauté Onions and Season: Add the finely diced yellow onion, garlic powder, and ground black pepper to the beef. Continue to sauté for another 3-4 minutes, stirring frequently until the onions soften and the beef is fully browned.
  4. Add Chili and Cheese: Stir the canned vegetarian chili and ½ cup of shredded cheddar cheese into the beef mixture until well combined. Remove the skillet from the heat once fully mixed.
  5. Fill Tortillas: Line a baking sheet with parchment paper. Place a generous scoop of the chili-beef mixture onto each flour tortilla and sprinkle an additional 1-2 tablespoons of cheddar cheese on top of the filling.
  6. Fold and Arrange Tacos: Fold each tortilla closed like a taco and arrange them on the prepared baking sheet in a single layer. Lightly spray the tops of the tortillas with cooking spray to help them brown evenly.
  7. Bake and Broil: Bake the tacos in the preheated oven for 12 minutes. Then switch the oven to broil and cook for an additional 2 minutes, watching carefully until the tops turn golden brown but do not burn.
