Ingredients

For the Tofu Burgers

  • 1 tbsp avocado oil plus more as needed
  • 1/2 red onion, finely diced
  • 1 block Nasoya’s Super Firm High Protein Tofu, finely crumbled
  • 1 tbsp tamari or soy sauce
  • 1 vegan “beef” or vegetable bouillon cube, crumbled
  • 1 tsp garlic powder
  • 1 1/2 tsp Tajin or chili lime seasoning
  • 1/2 tsp ground coriander
  • 1/4 tsp allspice
  • 1/3 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 tbsp nutritional yeast
  • Juice and zest of 1 lime
  • 4 tbsp adobo sauce from a can of chipotle peppers
  • 2 tbsp maple syrup
  • Whole grain burger buns, as needed

For the Grilled Corn

  • 4 ears of corn, husks removed
  • 1 clove of garlic, grated
  • Juice of half a lime
  • 1 tsp Tajin
  • Pinch of salt

Instructions

  1. Preheat and sauté onions: Preheat your oven to 425°F. Heat a heavy bottom skillet over medium heat with 1 tbsp of avocado oil. Once hot, add the finely diced red onion with a pinch of salt and sauté until softened and translucent.
  2. Cook tofu mixture: Add the crumbled tofu to the skillet, spreading it evenly to cover the bottom. Let it cook undisturbed for 3-4 minutes, then toss and cook for an additional 3-4 minutes until it starts to turn golden.
  3. Add seasonings: Stir in the tamari (or soy sauce), crumbled bouillon cube, garlic powder, 1 tsp Tajin, ground coriander, and allspice. Sauté while stirring to ensure the tofu is well coated with the spices. Remove from heat and let rest for 5 minutes.
  4. Form burger patties: Transfer the tofu mixture to a mixing bowl. Add breadcrumbs, all-purpose flour, nutritional yeast, lime zest, and lime juice. Stir to combine, then knead with your hands until the mixture holds together. Shape into four equal-sized 1/2 inch thick patties using a 1/2 cup scoop, molding tightly with lightly oiled hands.
  5. Bake the patties: Place the patties on a parchment lined baking tray. Bake in the preheated oven for 15 minutes.
  6. Baste and continue baking: Combine the adobo sauce, maple syrup, and 1/2 tsp Tajin in a small bowl. Brush this mixture on top of each patty, flip them carefully, and baste the other side. Return the tray to the oven and bake for another 15 minutes. Once done, let the burgers rest 5-10 minutes before serving.
  7. Grill the corn: While the burgers bake, heat a heavy bottom skillet or grill pan over medium-high heat. Place husked corn cobs in the pan and cook for about 10 minutes, turning every 2 minutes to achieve an even char.
  8. Prepare corn seasoning: Mix the grated garlic, lime juice, Tajin, and a pinch of salt in a small bowl.
  9. Finish corn and serve: Brush the hot, grilled corn with the garlic-lime-Tajin mixture and enjoy alongside your chipotle lime tofu burgers served on whole grain buns with your favorite toppings.

Notes

  • Make a large batch by doubling the recipe and freeze leftovers for a quick, convenient meal.
  • If super firm tofu isn’t available, use extra firm tofu but press excess water out for at least an hour or wrap in cheesecloth and squeeze manually to remove moisture.
  • Customize your burger with your favorite condiments and fresh veggies like lettuce, tomatoes, onions, and pickles. Vegan mayo, ketchup, or other sauces pair well.
