Delicious Choco Cheesecake Cookie Bites combine rich, fudgy chocolate brownie layers with creamy, tangy cheesecake swirls. These bite-sized treats are perfect for parties, snacks, or dessert, offering a perfect balance of chocolate and cheesecake flavors in one easy-to-make recipe.

Ingredients

Brownie Batter

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips

Cheesecake Filling

  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat the Oven: Set your oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easy.
  2. Make the Brownie Batter: In a bowl, whisk together the flour, cocoa powder, baking powder, and salt to combine the dry ingredients evenly. In another bowl, blend the melted butter with the granulated sugar until smooth. Beat in the eggs and vanilla extract until the mixture is uniform. Gradually fold the dry ingredients into the wet mixture until just combined. Finally, fold in the chocolate chips for added texture and richness.
  3. Prepare the Cheesecake Filling: In a separate bowl, beat the softened cream cheese with powdered sugar and lemon zest (if using) until creamy and smooth. This will provide a tangy, sweet contrast to the chocolate layers.
  4. Assemble the Cookie Bites: Pour about two-thirds of the brownie batter evenly into the prepared baking pan, covering the base completely. Drop spoonfuls of cheesecake filling over the brownie layer and gently spread to form a thin, even layer. Drizzle or dollop the remaining brownie batter on top of the cheesecake layer. Use a knife or toothpick to swirl the layers together gently, creating a beautiful marbled effect.
  5. Bake: Place the baking pan in the preheated oven and bake for 20 to 25 minutes. The edges should be set while the center remains slightly soft to maintain a fudgy texture. Remove from the oven and let cool completely on a wire rack before handling.
  6. Cut into Bites: Once cooled, use the parchment paper overhang to lift the entire baked mixture out of the pan onto a cutting board. Cut into small, bite-sized squares or rectangles for easy serving and enjoyment.

Notes

  • For best results, use room temperature cream cheese to avoid lumps in the cheesecake filling.
  • Make sure not to overmix the brownie batter to keep it tender and fudgy.
  • You can substitute semisweet chocolate chips with dark or milk chocolate chips according to taste.
  • Adding lemon zest in the cheesecake filling is optional but adds a refreshing tang.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • These cookie bites can also be frozen for up to 1 month; thaw before serving.
