Delicious and easy-to-make Chocolate Chip Cheesecake Bars featuring a chocolate chip cookie crust and topping wrapped around a rich, creamy cheesecake filling.

Ingredients

Cookie Dough

  • 40 oz Refrigerated chocolate chip cookie dough

Cheesecake Filling

  • 16 oz Cream cheese, softened
  • 1 large egg, room temperature
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon Vanilla extract
  • 1 teaspoon Lemon juice (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350 degrees F to get it ready for baking the bars.
  2. Prepare cookie dough: Place the refrigerated cookie dough in the freezer for a few hours, making it easier to slice thinly.
  3. Prepare cream cheese mixture: Allow the cream cheese to soften at room temperature. Leave one large egg out until it reaches room temperature as well.
  4. Line the pan: Line a 13×9-inch baking pan with parchment paper or non-stick foil for easy removal and cleanup.
  5. Form the crust: Slice half of the chilled cookie dough into 1/4-inch thick slices and arrange them in the bottom of the lined pan, pressing them to form an even crust.
  6. Bake the crust: Bake the cookie dough crust in the preheated 350-degree oven for 10 minutes to set it slightly before adding the cheesecake layer.
  7. Mix the cheesecake batter: While the crust is baking, beat the softened cream cheese, room temperature egg, granulated sugar, and vanilla extract together with an electric mixer on medium speed until smooth and creamy. If using, add lemon juice for a subtle tang.
  8. Add cheesecake layer: Once the crust is out of the oven, spread the cheesecake batter evenly over the warm crust.
  9. Add topping: Slice the remaining cookie dough and arrange the slices over the cheesecake layer as a topping.
  10. Bake the bars: Return the pan to the oven and bake for 35 to 40 minutes, until the cheesecake is set and the cookie dough topping is golden brown.
  11. Cool and chill: Let the bars cool completely, then refrigerate them before serving to allow the cheesecake to firm up perfectly.

Notes

  • For best results, make sure both the cream cheese and egg are at room temperature before mixing to avoid lumps.
  • Freezing the cookie dough makes it easier to slice thinly without losing shape.
  • Chilling the bars before cutting helps achieve clean, neat slices.
  • Feel free to add nuts or chocolate chunks to the batter for extra texture.
