Cloud Bread Pizza is a light and airy low-carb alternative to traditional pizza crust. Made primarily from whipped egg whites mixed with herbs and cornstarch, it creates a fluffy, golden base perfect for topping with classic pizza sauce, cheese, and sautéed vegetables. This recipe is quick to prepare and bake, offering a delicious and gluten-free pizza option that’s both satisfying and easy to customize.

Ingredients

Cloud Bread Base

  • 4 egg whites, separated from the yolks
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • 2 teaspoons cornstarch, or arrowroot powder

Toppings

  • ½ cup pizza sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup chopped onion
  • ¼ cup chopped bell pepper
  • ¼ cup mushrooms

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (177ºC) and line a baking sheet or pizza pan with parchment paper to prevent sticking.
  2. Whisk Egg Whites: Using a hand mixer or stand mixer with a whisk attachment, whisk the egg whites together with dried basil, oregano, garlic powder, and sea salt until the mixture becomes fluffy and soft peaks start forming, approximately 1-2 minutes. This aeration helps create the light structure of the cloud bread.
  3. Add Cornstarch: Gently add the cornstarch (or arrowroot powder) to the whipped egg whites, and continue whisking for another minute to fully incorporate it. This stabilizes the mixture and gives the crust structure.
  4. Shape the Base: Using a spatula or the back of a spoon, spread the egg white mixture evenly on the prepared baking sheet or pizza pan, forming a circular shape resembling a pizza crust.
  5. Bake the Crust: Place the baking sheet in the preheated oven and bake for about 15 minutes or until the crust turns golden brown, indicating it is cooked through and has the desired texture.
  6. Sauté Vegetables: While the crust bakes, sauté the chopped onion, bell pepper, and mushrooms in a pan over medium heat for 5-7 minutes until softened and slightly caramelized.
  7. Add Toppings and Bake Again: Remove the baked crust from the oven, spread pizza sauce evenly over it, sprinkle with shredded mozzarella cheese, and add the sautéed vegetables. Return to the oven and bake for another 10 minutes, or until the cheese is melted and beginning to brown.
  8. Optional Broil: For a more golden, bubbly cheese topping, broil the pizza for 1-2 minutes at the end. Watch closely to prevent burning.
  9. Serve: Remove from the oven and serve immediately while warm and fresh.

Notes

  • You can substitute arrowroot powder for cornstarch to keep it grain-free.
  • Make sure egg whites are at room temperature for best whipping results.
  • Broiling is optional but helps achieve a nicely browned cheese topping quickly.
  • Customize toppings as desired, but avoid heavy or watery options to maintain crust integrity.
  • Cloud bread is best eaten fresh as it can soften when stored.
