This Coconut Key Lime Pie Smoothie is a creamy, refreshing blend that perfectly mimics the taste of a classic key lime pie with a nutritious twist. Made with frozen banana, fresh lime juice, coconut milk, and hints of vanilla and spinach for added nutrients, this smoothie serves as a delightful breakfast, snack, or healthy dessert option. It’s dairy-free when made with coconut yogurt, packed with protein, and finished with a festive graham cracker rim and toasted coconut topping.

Ingredients

Smoothie Ingredients

  • 1 large frozen ripe banana, sliced
  • Zest from 1 small lime or key lime
  • 2 tablespoons fresh lime or key lime juice
  • ½ cup vanilla or coconut Greek yogurt (use coconut based yogurt to keep it dairy free!)
  • ½ cup light coconut milk (or milk of choice)
  • ½ cup fresh spinach
  • ½ teaspoon vanilla extract
  • Optional: 1-2 teaspoons maple syrup or honey to sweeten if necessary

For Serving

  • Extra lime wedge, for rimming glass
  • Graham cracker crumbs
  • Whipped cream
  • Shredded toasted coconut

Instructions

  1. Prepare the glass: On a small plate, spread crushed graham crackers. Wet the rim of your serving glass using an extra lime wedge, then dip the rim into the graham cracker crumbs, rolling to coat evenly. Set aside.
  2. Combine ingredients: In a high-powered blender, add the frozen banana slices, lime zest, lime juice, vanilla or coconut Greek yogurt, light coconut milk, fresh spinach, and vanilla extract.
  3. Blend until smooth: Blend all ingredients until silky smooth. If the mixture is too thick, add a little more coconut milk to reach desired consistency.
  4. Taste and adjust sweetness: Sample the smoothie and add 1-2 teaspoons of maple syrup or honey if additional sweetness is preferred. Blend briefly to combine.
  5. Serve and garnish: Pour the smoothie into the prepared glass. Top with a generous dollop of whipped cream and sprinkle with shredded toasted coconut. Serve immediately.

Notes

  • For the best flavor, try using Siggi’s key lime yogurt if available; otherwise vanilla or coconut flavored yogurts work well.
  • To keep this smoothie vegan and dairy-free, opt for coconut-based or other dairy-free yogurts.
  • You can increase the spinach up to 2 cups to boost nutrients; the spinach primarily adds color and nutrition without overpowering the flavor.
  • Adding a scoop of vanilla protein powder is a great way to increase protein content and enhance flavor.
