  • 4 cloves garlic, minced
  • 1 can coconut milk (approximately 16.3 ounces, canned, not boxed)
  • 4 limes (juice and zest)
  • 1/2 teaspoon salt
  • 1 pound shrimp, any size you prefer

  • 1/4 cup cilantro, chopped
  • Toasted coconut

Instructions

  1. Saute the garlic: Melt the coconut oil in a large skillet over medium heat. Add the minced garlic and sauté for 2 minutes until fragrant and slightly golden, being careful not to burn.
  2. Prepare the sauce: Zest 2 of the limes and set the zest aside for garnish. Add the entire can of coconut milk, the juice from all 4 limes, and 1/2 teaspoon salt to the skillet. Stir to combine all ingredients and simmer for 5 to 7 minutes until the sauce thickens slightly and the flavors meld.
  3. Cook the shrimp: Add the shrimp directly to the simmering sauce, even if they are frozen. Cook until the shrimp turn pink and are opaque, flipping part way through to ensure even cooking. The cooking time will depend on shrimp size; for large shrimp, approximately 3 minutes is needed.
  4. Finish and serve: Remove the skillet from the heat. Stir in chopped cilantro if using. Garnish the dish with the reserved lime zest and a sprinkle of toasted coconut for added texture and flavor before serving.

Notes

  • Canned coconut milk and boxed coconut milk are very different; canned coconut milk is thicker and has a more concentrated flavor, making it ideal for this recipe.
  • If you prefer a thinner sauce, you can add 1/4 cup of chicken stock or water along with the coconut milk before simmering.
