Ingredients

Wet Ingredients

  • 113 g (1 stick) Unsalted Butter
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 3 tablespoon Espresso Powder

Sugars

  • 100 g (½ cup) Granulated Sugar (caster sugar)
  • 110 g (½ cup) Light Brown Sugar

Dry Ingredients

  • 180 g (1½ cups) All-purpose Flour (plain flour)
  • ½ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Salt

Instructions

  1. Melt Butter and Combine Sugars: Melt the unsalted butter in the microwave, then pour it into a mixing bowl. Add the granulated sugar and light brown sugar, stirring together until smooth.
  2. Prepare Espresso Paste: Add a splash of hot water to the espresso powder and stir until it forms a smooth paste. Mix this paste into the butter and sugar mixture to evenly distribute the coffee flavor.
  3. Add Egg and Vanilla: Crack the egg into the bowl and add the vanilla extract. Stir well until all wet ingredients are fully combined.
  4. Incorporate Dry Ingredients: Sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually add the dry ingredients into the wet mixture, stirring continuously until a soft dough forms.
  5. Chill Dough: Cover the dough and chill in the refrigerator for 30 minutes. This step firms the dough, making it easier to scoop and shape.
  6. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (180°C), or 160°C if using a fan-assisted oven. Line a cookie sheet with parchment paper.
  7. Scoop and Shape Dough: Using a spoon, scoop walnut-sized portions of dough and roll them into balls with your hands. Arrange the dough balls on the prepared baking sheet, spacing them well apart to allow for spreading during baking.
  8. Bake Cookies: Place the baking sheet in the oven and bake for 12 minutes. Once baked, remove the cookies from the oven and let them rest on the baking tray for at least 10 minutes to set.
  9. Cool Cookies: Transfer the cookies to a wire rack to cool completely before serving or storing.

Notes

  • For stronger coffee flavor, increase espresso powder by 1 teaspoon.
  • Ensure the butter is fully melted for smooth mixing but not too hot to cook the eggs.
  • Chilling the dough is crucial for better texture and easier handling.
  • Store cookies in an airtight container to maintain freshness for up to 5 days.
  • These cookies can also be frozen before baking; bake directly from frozen adding an extra 2 minutes to baking time.
