These Copycat Star Crunch Cookies are a delectable treat combining a rich, creamy mixture of caramel, milk chocolate, and mini marshmallows with crispy Rice Krispies cereal. Soft, chewy, and irresistibly sweet, these cookies mimic the beloved Star Crunch candy bars perfectly, delivering a nostalgic flavor with an unbeatable crunch.

Ingredients

Main Ingredients

  • 1/2 cup butter (1 stick)
  • 2 cups Kraft caramel bits (11 ounce bag)
  • 2 cups milk chocolate chips (11 ounce bag)
  • 1/4 cup milk
  • 5 1/2 cups mini marshmallows (10 ounce bag)
  • 6 cups Rice Krispies cereal (crispy rice cereal)

Instructions

  1. Heat Ingredients: In a large saucepan or stock pot over low heat, combine butter, caramel bits, milk chocolate chips, and milk. Heat gently to begin melting the ingredients.
  2. Melt and Stir: Using the back of a wooden spoon, mash the caramel bits as they soften, stirring continually. This helps the mixture become smooth and creamy without burning. This process should take about 5 minutes; keep the heat low to avoid scorching.
  3. Add Marshmallows: Stir in the mini marshmallows and continue stirring until they melt completely into the chocolate and caramel mixture, creating a smooth, uniform batter. Remove pot from heat.
  4. Mix with Cereal: Add the Rice Krispies cereal to the chocolate mixture. Gently stir until all the cereal pieces are evenly coated with the melted ingredients.
  5. Shape Cookies: Line a cookie sheet or work surface with parchment paper. Using a 1/4 cup measure or cookie scoop, place scoops of the mixture onto the parchment. Press each scoop down with the bottom of a plastic measuring cup or cup (sprayed lightly with nonstick spray to prevent sticking) to flatten slightly.
  6. Set and Shape: Let the cookies cool for about 5 minutes so they set slightly. Once firmer, use your hands to gently press and round the edges for a smooth, finished cookie shape.

Notes

  • Be sure to keep the heat low during melting to prevent burning the chocolate and caramel.
  • Spraying the measuring cup with nonstick spray will help shape the cookies easily without sticking.
  • You can adjust the size of cookies by using more or less of the mixture per scoop.
  • Allow cookies to cool completely before storing to maintain their shape and texture.
  • Store cookies in an airtight container at room temperature for up to 3 days.
