This Cottage Cheese Chocolate Mousse is an easy, high-protein dessert that combines creamy full-fat cottage cheese with rich unsweetened cocoa powder and natural sweeteners for a smooth, indulgent treat. Ready in minutes using a blender, it’s perfect for a quick healthy dessert option that’s thick, velvety, and delicious.

Ingredients

Main Ingredients

  • 1 cup full fat cottage cheese
  • 2 tablespoons unsweetened cocoa powder
  • 2 to 3 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 1 tablespoon milk or almond milk (for blending)

Instructions

  1. Add Cottage Cheese: Place the full-fat cottage cheese into a blender or food processor to start the mousse base.
  2. Add Flavorings: Add the unsweetened cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt into the blender with the cottage cheese.
  3. Blend Until Smooth: Blend the mixture for 30 to 60 seconds until it becomes completely smooth and creamy, breaking down the curds of the cottage cheese.
  4. Scrape and Blend Again: Stop blending and use a spatula to scrape down the sides of the blender. Blend again briefly until the mousse is fully smooth and even in texture.
  5. Adjust Sweetness: Taste the mousse and add a little more maple syrup or honey if you desire a sweeter flavor. Blend briefly again if adding more sweetener.
  6. Serve or Chill: Serve the mousse immediately if you prefer a softer texture, or chill it for about 30 minutes in the refrigerator for a thicker, more set consistency.

Notes

  • Blend thoroughly: Ensure the cottage cheese is fully blended to break down all curds for a smooth mousse texture.
  • Use full-fat cottage cheese: This provides the creamiest consistency and richest flavor.
  • Adjust sweetness: Depending on the bitterness of the cocoa powder, feel free to add more sweetener after tasting.
