This Cottage Cheese Pizza Crust recipe offers a delicious, high-protein alternative to traditional pizza dough by using cottage cheese and whole-wheat flour. It is easy to prepare, requires minimal ingredients, and yields a tasty, macro-friendly pizza crust perfect for a low-carb meal topped with your favorite pizza sauce, cheese, and lean toppings.

Ingredients

For the Crust

  • ¾ cup (180 g) cottage cheese
  • 1 cup (150 g) whole-wheat flour, or preferred flour
  • ½ tsp baking powder

For the Pizza Topping

  • 3 tbsp pizza sauce (see notes for recipe)
  • 3 tbsp shredded mozzarella cheese, low fat
  • 4 slices turkey pepperoni, or preferred toppings

Instructions

  1. Preheat Oven: Preheat your oven to 360°F (180°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking.
  2. Blend Cottage Cheese: Place the cottage cheese into a food processor or high-speed blender and blend on high for 30 seconds to 1 minute until it reaches a smooth and creamy consistency.
  3. Combine Ingredients: In a large bowl, mix the whole-wheat flour, blended cottage cheese, and baking powder together. Stir quickly to form a dough, adjusting with additional flour if sticky or a splash of milk if too dry.
  4. Knead Dough: Transfer the dough onto a floured surface and knead it gently until a soft dough ball forms.
  5. Shape Crust: Using a rolling pin and your hands, roll out the dough into a round shape about 6 inches (15 cm) in diameter, ensuring the edges are thicker than the center. Sprinkle more flour as needed to prevent sticking.
  6. Add Toppings: Spread the pizza sauce evenly over the crust, leaving a slight border around the edges. Sprinkle shredded low-fat mozzarella cheese and place turkey pepperoni or your choice of toppings evenly over the sauce.
  7. Bake Pizza: Place the pizza in the preheated oven and bake for 15 to 20 minutes, or until the cheese is melted and the crust is golden brown.
  8. Cool and Serve: Remove the pizza from the oven and let it cool for 5 to 10 minutes before slicing and serving.

Notes

  • You can substitute whole-wheat flour with gluten-free flour if desired, but adjust quantities as needed.
  • For a richer flavor, use homemade or store-bought pizza sauce.
  • Toppings can be customized to include vegetables, lean meats, or plant-based alternatives.
  • If dough is too sticky, add flour a tablespoon at a time; if too dry, add milk gradually.
  • Resting the dough for 10 minutes before rolling can improve texture but is optional.
