Ingredients

Salmon and Filling

  • 4 salmon fillets, 7 ounces each, skin removed
  • 2 tablespoons avocado or olive oil, divided
  • Salt and ground black pepper, to taste
  • 1/2 teaspoon smoked paprika, plus more for seasoning shrimp
  • 1 teaspoon Cajun seasoning, plus more for seasoning shrimp
  • 4 ounces frozen spinach, thawed
  • 5 ounces Boursin Shallot & Chive cheese, at room temperature
  • 1 jalapeno, deseeded and diced
  • 8 ounces lump crab or claw crab meat
  • 1/4 cup grated Parmesan cheese
  • 2 teaspoons garlic, minced
  • 12-16 medium shrimp, peeled and cleaned

Cajun Butter Sauce

  • 2 tablespoons unsalted butter, melted
  • Juice of 1 lemon
  • 1/4 teaspoon Cajun seasoning
  • 1/4 teaspoon smoked paprika
  • Lemon wedges, for garnish

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) and line a large baking sheet with parchment paper to prepare for baking.
  2. Prepare Salmon: Drizzle 1 tablespoon of oil over the salmon fillets and season both sides with salt, pepper, 1/2 teaspoon smoked paprika, and 1 teaspoon Cajun seasoning. Make a slit through the middle of each fillet, cutting about two-thirds of the way through to create a pocket for the stuffing.
  3. Prepare Spinach Mixture: Squeeze excess liquid from the thawed spinach and discard it. In a bowl, mix the spinach with Boursin cheese, diced jalapeno, crab meat, Parmesan cheese, and minced garlic. Season with salt and pepper to taste and set aside.
  4. Season Shrimp: Place shrimp in a separate bowl, add the remaining 1 tablespoon of oil, more Cajun seasoning, smoked paprika, salt, and pepper. Toss well to coat evenly.
  5. Stuff Salmon: Fill each salmon fillet pocket with the crab and spinach mixture, then arrange the seasoned shrimp on top of the fillets.
  6. Apply Cajun Butter: Transfer the stuffed salmon fillets onto the prepared baking sheet and pour the melted Cajun butter sauce evenly over them.
  7. Bake: Bake in the preheated oven for 15-17 minutes, or until the salmon is cooked through, opaque in the center, and flakes easily with a fork.
  8. Serve: Garnish with lemon wedges and serve immediately for a delightful seafood meal.

Notes

  • Make sure to squeeze out as much water as possible from the spinach to avoid soggy stuffing.
  • If you prefer spicier, leave some seeds in the jalapeno or increase Cajun seasoning.
  • The baking time may vary slightly depending on the thickness of the salmon fillets.
  • Use fresh or thawed shrimp for best results, ensuring they are peeled and cleaned.
  • For a richer flavor, feel free to substitute Boursin cheese with cream cheese mixed with herbs.
