Delicious and easy-to-make Cranberry Bars featuring a buttery sugar cookie crust and crumble topping with a tangy cranberry filling, perfect for holiday treats or year-round snacking.

Ingredients

Crust and Crumble Topping

  • 1 package (17.5 ounces) sugar cookie mix
  • ½ cup salted butter, melted
  • 1 large egg
  • 3 tablespoons all-purpose flour
  • ½ cup quick oats
  • ¼ teaspoon ground cinnamon

Cranberry Filling

  • 12 ounces frozen cranberries (about 4 cups)
  • ⅔ cup granulated sugar
  • 1 ½ tablespoons cornstarch
  • ¼ teaspoon ground cinnamon
  • 2 tablespoons cranberry juice

Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Spray a 9×13 inch baking dish with cooking spray and line it with parchment paper to prevent sticking. Set aside.
  2. Make Crust Mixture: In a large bowl, combine the sugar cookie mix, melted butter, egg, all-purpose flour, quick oats, and ground cinnamon. Use a stand mixer or hand mixer to beat the ingredients until well combined and smooth.
  3. Form Crust Layer: Reserve about ¼ of the cookie mixture and spoon the remaining ¾ into the prepared baking dish. Press it firmly and evenly across the bottom to form the crust layer.
  4. Prepare Cranberry Filling: In another large bowl, stir together the frozen cranberries, granulated sugar, cornstarch, ground cinnamon, and cranberry juice until fully combined.
  5. Assemble Bars: Spread the cranberry filling evenly over the pressed crust layer in the baking dish. Then, crumble and sprinkle the reserved cookie mixture evenly over the cranberry layer to create the topping.
  6. Bake: Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the topping is golden brown and the cranberry filling is bubbling.
  7. Cool and Serve: Remove from the oven and let the bars cool for at least 10 minutes before cutting into squares. For best flavor and texture, allow to cool completely and serve at room temperature.

Notes

  • Refrigeration: Store leftover bars in an airtight container in the refrigerator for up to 2 days once fully cooled.
  • Freezing: After cooling completely, wrap bars individually in plastic wrap and place them in an airtight, freezer-safe container. Freeze for up to 3 months. Thaw before serving.
