Ingredients

Cranberry Sauce

  • 1 ½ cups Whole Cranberries, fresh or frozen
  • ¼ cup Granulated Sugar
  • 2 Tablespoons Honey
  • 1 teaspoon White Wine Vinegar
  • Pinch Salt

Pizza Toppings

  • 2 cups Chicken Breast, cooked and cubed
  • 1 ½ cups Brie Cheese, cut into ½ inch cubes
  • 1 cup Fresh Mozzarella Cheese, shredded
  • Red Onions, thinly sliced (optional)

Pizza Base

  • 14″ – 16″ pizza crust (store-bought or homemade)

Instructions

  1. Make the Cranberry Sauce: In a small saucepan, combine the cranberries, granulated sugar, honey, white wine vinegar, and a pinch of salt. Place over medium-low heat and stir regularly, bringing the cranberries to a gentle simmer. Using the back of a spoon, crush the cranberries as they cook. Continue simmering until the mixture thickens, about 5 to 7 minutes. Remove from heat and set aside to cool.
  2. Preheat the Oven: Preheat your oven to 500°F (260°C). Once it reaches 500°F, reduce the temperature to 475°F (245°C) to prepare for baking the pizza.
  3. Assemble the Pizza: On a 14 to 16-inch pizza crust, spread the cooled cranberry sauce evenly over the surface. Distribute the cooked, cubed chicken breast uniformly over the cranberry layer. Scatter the brie cheese cubes and shredded fresh mozzarella cheese on top. Add thinly sliced red onions if desired for extra flavor and texture.
  4. Bake the Pizza: Place the assembled pizza onto a baking sheet or pizza stone and bake in the preheated oven at 475°F for 14 to 16 minutes. Bake until the cheese is melted and bubbly and the crust is golden brown and crispy.
  5. Cool and Serve: Remove the pizza from the oven and let it cool on the pan for about 5 minutes to allow the toppings to set slightly. Slice and serve warm for the best flavor experience.

Notes

  • Fresh or frozen cranberries can be used for the sauce; if using frozen, do not thaw before cooking.
  • Adjust sugar and honey in the cranberry sauce according to your preferred sweetness level.
  • Using a pizza stone will help achieve a crispier crust.
  • Brie cheese rind is edible; you can leave it on or remove it based on preference.
  • If you prefer, substitute chicken with turkey or leave it off for a vegetarian variant, though the recipe as is is not vegetarian.
  • Thinly sliced red onions add a mild bite; omit if you prefer a milder flavor.
