  • 10 oz Uncooked Pasta (of choice)
  • 2 cups Cooked Chicken Breasts (diced or shredded)
  • ¼ teaspoon Red Pepper Flakes (optional)

Avocado Sauce for Pasta

  • 1 large Ripe Avocado
  • ¼ cup Fresh Basil Leaves
  • ¼ cup Fresh Parsley Leaves
  • 2 Scallions (green part only)
  • 2 large Garlic cloves (or 4 small)
  • 2 tablespoons Lemon Juice
  • ¼ cup Parmesan Cheese (grated, plus more for serving)
  • ¼ cup Extra Virgin Olive Oil
  • ¼ teaspoon Sea Salt (or to taste)
  • ¼ teaspoon Freshly Ground Pepper (or to taste)

For Serving (Optional)

  • Rocket Leaves (as needed)
  • Toasted Sourdough
  • Roasted Cherry Tomatoes (as needed)

Instructions

  1. Cook Pasta: Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Reserve ¾ to 1 cup of the pasta cooking water before draining the pasta well and setting it aside.
  2. Prepare Avocado Sauce: Cut the avocado in half, remove the seed, and scoop out the flesh into a food processor. Add fresh basil, parsley, scallions (green part), garlic cloves, grated Parmesan, extra virgin olive oil, sea salt, and freshly ground pepper. Blend until smooth. Taste the sauce and adjust seasoning as needed. If the sauce is too thick, gradually add a splash of milk or reserved pasta water to reach desired consistency.
  3. Assemble Pasta: In a large bowl, toss the cooked pasta with the creamy avocado sauce, cooked chicken breasts, and red pepper flakes (if using). Add some of the reserved pasta water as needed to help coat the pasta evenly and achieve a creamy texture.
  4. Serve: Plate the pasta and sprinkle additional grated Parmesan and red pepper flakes on top if desired. Serve with optional rocket leaves, roasted cherry tomatoes, and toasted sourdough on the side. Enjoy immediately for best flavor and texture.

  • Store any cooled leftovers in a sealed container in the refrigerator for up to 2 days.
