Ingredients

Main Ingredients

  • 2.5 lbs cooked shredded chicken breast (4 cups)
  • 3 1/2 cups raw cauliflower rice (moisture squeezed out)
  • 1/2 cup Frank’s Hot Sauce or buffalo sauce of choice
  • 2 tbsp dairy-free ranch dressing
  • 1/2 cup mayo
  • 1/2 cup chopped white onion
  • 1/3 cup banana peppers
  • 1/3 cup chopped green onions
  • 1/2 tsp salt
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 1/2 tbsp nutritional yeast
  • Optional: 1 1/2 cups shredded cheese, dairy-free or regular (omit if Whole30 or paleo)

Garnish

  • 2 tbsp ranch dressing
  • 2 tbsp Frank’s Hot Sauce
  • 1/4 cup sliced green onions

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray to prevent sticking.
  2. Mix Chicken and Flavors: In a large mixing bowl, combine the shredded chicken, buffalo sauce, ranch dressing, mayo, chopped green onions, spices (salt, paprika, pepper, garlic powder, onion powder), chopped banana peppers, nutritional yeast, and chopped white onions. Mix well until everything is evenly coated.
  3. Prepare Cauliflower Rice: If using frozen cauliflower rice, cook it first then place in a cheesecloth to squeeze out any extra moisture. This step prevents a watery casserole. Fresh cauliflower rice from the produce aisle is preferred.
  4. Combine Ingredients: Add the prepared cauliflower rice to the chicken mixture and stir until well combined. Transfer the mixture to the greased baking dish and spread evenly.
  5. Add Cheese Topping: Sprinkle shredded cheddar cheese over the top of the casserole, if using, to add a melty, rich layer.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. Cool and Garnish: Remove casserole from the oven, let it cool for a few minutes, then garnish with drizzled ranch dressing, buffalo sauce, and additional sliced green onions before serving.

Notes

  • Avoid overbaking to keep the casserole moist and prevent drying out.
  • If you prefer, store-bought compliant mayo or ranch dressings like Primal Kitchen or Tessemae’s can be used for convenience.
  • You can substitute ranch dressing with blue cheese dressing based on your taste preference.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months.
  • To freeze, cool casserole completely, then transfer (except garnish) to airtight containers. Thaw overnight in the fridge before reheating.
  • Reheat individual portions in the microwave for 2-3 minutes before serving.
