Ingredients

Vegetables

  • 4 cups zucchini, thinly sliced
  • 1 onion, chopped

Dairy & Eggs

  • 2 tablespoons butter
  • 4 eggs
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Seasonings

  • 1 tablespoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the quiche.
  2. Sauté Onion: In a large skillet, melt butter over medium heat. Add chopped onion and sauté until translucent, about 5 minutes, to develop a sweet and tender base.
  3. Sauté Zucchini: Add thinly sliced zucchini to the skillet and cook for 5-7 minutes until just tender but not mushy, then remove from heat and set aside.
  4. Mix Egg and Cream: In a mixing bowl, whisk together the eggs and heavy cream until fully combined, creating a smooth custard base.
  5. Add Cheeses and Seasonings: Stir in grated Parmesan and shredded mozzarella cheeses, then add dried basil, salt, and black pepper, mixing well to combine all flavors.
  6. Prepare Baking Dish: Lightly grease a 9-inch pie dish to prevent sticking. Evenly spread the sautéed zucchini and onion mixture across the bottom of the dish.
  7. Assemble Quiche: Pour the egg, cream, and cheese mixture evenly over the zucchini and onions, making sure to cover all areas. Optionally sprinkle paprika on top for color and a subtle smoky flavor.
  8. Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the quiche is set in the center and lightly golden on top.
  9. Cool and Serve: Remove the quiche from the oven and let it cool for a few minutes to set further, then slice and serve warm or at room temperature.
