The recipe is easy to prepare in a single pan, blending sautéed sausage, fragrant garlic and onion, and spinach for a nutritious and satisfying meal ideal for any weeknight dinner.

Ingredients

Sausage and Protein

  • 12 Ounces Chicken and Apple Sausage (such as Applegate)

Vegetables

  • 4 Cups Cubed Butternut Squash
  • 3-4 Cups Baby Spinach
  • 1 Sweet Onion, Diced
  • 2-4 Cloves of Garlic, Minced

Grains & Broth

  • 1 Cup Uncooked Basmati Rice
  • 3 Cups Chicken Broth

Seasonings & Oils

  • 1 Tablespoon Olive Oil
  • 1 Teaspoon Salt
  • ½ Teaspoon Black Pepper

Instructions

  1. Cook Sausage: Thinly slice the chicken and apple sausage. Heat olive oil in a large pan over medium heat and sauté the sausage slices until they are golden brown on both sides, about 5-7 minutes. Remove the cooked sausage from the pan and set aside.
  2. Sauté Vegetables: Add a little more olive oil into the same pan. Add cubed butternut squash, diced onion, minced garlic, salt, and black pepper. Cover the pan and cook over medium heat, stirring every few minutes until the butternut squash is tender, about 10-12 minutes.
  3. Create Creamy Sauce: Pour the chicken broth into the pan with the cooked vegetables. Using an immersion blender, carefully blend the mixture until smooth and creamy. Alternatively, transfer the mixture to a blender and blend until smooth, then return it to the pan.
  4. Simmer with Rice and Sausage: Stir uncooked basmati rice and the cooked sausage back into the creamy sauce. Mix well to combine. Cover the pan and simmer on low heat until the rice is fully cooked and tender, approximately 18-20 minutes. Stir occasionally to prevent sticking.
  5. Finish with Spinach: Once the rice is cooked, fold in the baby spinach gently. Cook uncovered for 1-2 minutes more until the spinach is wilted but still vibrant green. Serve the creamy chicken sausage and rice hot.

Notes

  • Slice sausages thinly for the perfect bite-sized pieces.
  • Add extra chicken broth if the rice needs more liquid during cooking.
  • Do not add the spinach until the rice is fully cooked to prevent overcooking the greens.
  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
