Ingredients

Vegetables & Aromatics

  • 3 large onions, sliced
  • 3 cloves of garlic, minced
  • 2 cups (250 g) cherry tomatoes
  • Fresh parsley, chopped (for garnish)

Spices & Seasonings

  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp ground cumin

Main Ingredients

  • 2 Tbsp olive oil
  • 9 oz (250 g) pasta of choice
  • 2 Tbsp tomato paste
  • ¾ cup (180 g) dairy-free milk
  • 2 oz (60 g) vegan parmesan cheese
  • 12 Tbsp chili oil
  • Reserved pasta water (as needed to thin the sauce)

Instructions

  1. Prepare the onions: Peel and thinly slice the onions. Heat the olive oil in a large skillet over medium heat.
  2. Sauté onions with spices: Add the sliced onions along with smoked paprika, onion powder, garlic powder, salt, and cumin to the skillet. Cook for about 5 minutes, stirring occasionally, until the onions begin to soften.
  3. Add garlic and water, cook slowly: Add the minced garlic and ½ cup water to the skillet. Continue cooking the onions and garlic for 25–30 minutes, stirring occasionally, until the onions turn golden brown. Add splashes of water or low-sodium broth as needed to prevent burning.
  4. Cook the pasta: Meanwhile, cook the pasta in a large pot of salted boiling water according to package directions minus 1-2 minutes for al dente texture. Reserve 1 cup of pasta cooking water, then drain the pasta.
  5. Cook tomatoes and tomato paste: Add the cherry tomatoes to the skillet with the golden onions and cook for a few minutes until softened. Stir in the tomato paste and chili oil.
  6. Add dairy-free milk and cheese: Pour in the dairy-free milk and vegan parmesan cheese, stirring to combine. Simmer the sauce for a few minutes until it thickens slightly.
  7. Adjust sauce consistency: If the sauce becomes too thick, add reserved pasta water gradually to reach desired creaminess.
  8. Combine pasta and sauce: Lightly mash a few tomatoes in the skillet to release more flavor. Add the drained pasta to the skillet and toss thoroughly to coat evenly in the creamy onion and tomato sauce.
  9. Season and garnish: Taste the pasta and adjust the seasoning as needed. Serve garnished with chopped fresh parsley, an optional drizzle of chili oil, and extra vegan parmesan cheese. Enjoy your creamy onion pasta with tomatoes!
