Ingredients

Mascarpone Cream

  • 15.87 oz Mascarpone cheese, room temperature
  • 1 teaspoon Vanilla extract
  • ½ cup Pumpkin puree (preferably canned, well drained if fresh)
  • ⅔ cup Granulated sugar
  • ⅓ cup Brown sugar
  • 2 teaspoon Pumpkin pie spice
  • ¼ teaspoon Kosher salt
  • 2 cup Heavy cream, cold

  • 28 Ladyfingers
  • 2 cups Coffee espresso or strong brewed coffee, cooled

Instructions

  1. Prepare the coffee: Brew espresso or very strong coffee and allow it to cool to room temperature. Set aside while preparing the cream mixture.
  2. Mix mascarpone and sugars: In a large mixing bowl, combine the room temperature mascarpone cheese, brown sugar, granulated sugar, kosher salt, and pumpkin pie spice. Using an electric hand mixer, beat until the mixture is smooth and well combined, ensuring no lumps remain.
  3. Incorporate pumpkin puree: Add the pumpkin puree to the mascarpone mixture and mix again until evenly blended and creamy.
  4. Whip the heavy cream: Pour in the cold heavy cream and continue mixing for 3 to 4 minutes until the filling thickens and holds soft peaks.
  5. Assemble the first layer: Quickly dip each ladyfinger into the cooled coffee for 1 to 2 seconds to avoid sogginess. Arrange them in a single even layer in a 13 by 9 inch baking dish.
  6. Add mascarpone layer: Spread half of the mascarpone-pumpkin cream over the soaked ladyfingers and smooth it gently with a spatula.
  7. Second ladyfinger layer: Dip the remaining ladyfingers in the coffee just as before and place them over the cream layer evenly.
  8. Pipe remaining filling: Fill a piping bag fitted with a star tip with the remaining mascarpone cream and pipe dollops across the second layer of ladyfingers, covering the surface elegantly.
  9. Chill and set: Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the ladyfingers to soften properly.
  10. Serve: Before serving, dust the tiramisu generously with cocoa powder for a classic finish. Enjoy chilled.
