This Creamy Strawberry Chia Pudding combines fresh strawberries, Greek yogurt, and chia seeds to create a nutritious and delicious breakfast or snack. Blended to a smooth consistency with your choice of milk and lightly sweetened with maple syrup, this pudding thickens to a luscious texture after chilling, making it a refreshing and protein-packed treat.

Ingredients

Fruit and Dairy

  • 16 oz fresh strawberries, stems removed and halved
  • 1 5.3 oz container strawberry Greek yogurt

Liquid Ingredients

  • 1 ½ cups soy milk (or milk of choice)
  • 1 tsp vanilla extract

Seeds and Sweeteners

  • ½ cup chia seeds
  • 5 tsp pure maple syrup, to taste

Optional Toppings

  • 1 tbsp almond butter (optional)
  • Whipped cream for topping (optional)

Instructions

  1. Blend Ingredients: Place sliced strawberries, soy milk, strawberry Greek yogurt, vanilla extract, and optional almond butter into a blender. Blend on high until the mixture is smooth and creamy, ensuring the fruit is fully pureed.
  2. Mix in Chia Seeds: Pour the blended mixture into a large mixing bowl. Add the chia seeds and whisk thoroughly until combined evenly without clumps. At this point, taste the pudding mixture and add maple syrup sweetener to achieve your preferred sweetness level (around 4 tsp was ideal).
  3. Let Thicken: Set the chia pudding mixture aside for about 15 minutes so the chia seeds begin absorbing the liquid and thickening the mixture. Whisk again after this period to break any clumps and redistribute chia seeds.
  4. Refrigerate: Cover the pudding and refrigerate for a minimum of 4 hours or overnight, allowing the pudding to fully set and develop a creamy, thick texture.
  5. Serve and Garnish: Serve the chilled chia pudding topped with whipped cream, cacao nibs, chocolate chips, coconut flakes, or an extra dollop of almond butter for added flavor and texture.

Notes

  • You can blend the chia seeds with the base mixture for an ultra-smooth pudding texture.
  • Use any milk alternative you prefer, such as almond, oat, or cow’s milk.
  • Adjust the sweetness with pure maple syrup to suit your taste.
  • The pudding keeps well refrigerated for up to 3 days.
  • The optional almond butter adds richness and healthy fats to the pudding.
