Ingredients

Salad

  • 8 large tomatoes, red and yellow, sliced into wedges
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced

Dressing

  • 1/2 cup sour cream
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon sea salt or to taste
  • Pinch black pepper or to taste

Garnish

  • Chopped green onion
  • Chopped dill

Instructions

  1. Prepare the Dressing: In a small bowl, combine the sour cream, plain Greek yogurt, fresh lemon juice, minced garlic, and chopped fresh dill. Add sea salt and black pepper to taste. Stir well to blend all ingredients smoothly and set aside.
  2. Prepare the Vegetables: Slice the red and yellow tomatoes into wedges and place them in a large mixing bowl. Add the thinly sliced red onion to the bowl.
  3. Combine Salad and Dressing: Just before serving, pour the prepared creamy dressing over the tomato and onion mixture. Gently toss everything together to coat the vegetables evenly with the dressing.
  4. Add Garnish: Sprinkle chopped green onions and dill on top of the salad as a fresh garnish.
  5. Serve or Store: Serve the salad immediately for the best texture and flavor. If storing, refrigerate and consume within 5 to 6 hours as the dressing and tomatoes will remain fresh during this time.

Notes

  • How to choose the best tomatoes: Pick heavier tomatoes which are juicier. The tomato should be firm yet slightly yielding to gentle pressure without leaving indentations. The skin should be smooth, unblemished, and vibrant red. A fresh, slightly sweet smell is a good sign. Avoid tomatoes with wrinkled skin or dried stems and leaves.
  • For a richer, creamier dressing, substitute your favorite mayonnaise such as Miracle Whip instead of Greek yogurt.
  • Wait to add salt and pepper until just before serving to keep the salad fresh.
  • To speed up ripening of tomatoes naturally, wrap them in newspaper, but avoid forcing ripening as it may reduce flavor.
  • When storing sliced vegetables or fruits, add a paper towel to the container base to absorb moisture and prevent sogginess.
  • Chilling the salad for a couple of hours before serving helps enhance and meld flavors.
