Ingredients

Pasta

  • 16 oz pasta

Truffle Sauce

  • 1 cup cashews soaked in boiling hot water for 30 minutes to 1 hour
  • ¾ cup water
  • ¼ cup nutritional yeast
  • 1 Tablespoon truffle oil
  • 1 clove garlic
  • 1 teaspoon truffle salt, use more or less as preferred

Sautéed Mushrooms

  • 1 Tablespoon vegan butter or substitute with oil
  • 16 ounces mushrooms (button or a mix of button and shiitake)
  • 1 Tablespoon lemon juice (about ½ lemon, juiced)
  • 1 teaspoon truffle oil
  • Truffle salt to taste
  • 3 sprigs fresh thyme (optional but adds a lot of flavor)

Instructions

  1. Soak Cashews: Place cashews in a bowl with boiling hot water and soak for 30 minutes to 1 hour. Alternatively, soak in cold water covered in the fridge for 6-8 hours.
  2. Cook Pasta: While cashews soak, cook the pasta according to package instructions. Drain and set aside once done.
  3. Sauté Mushrooms: Heat vegan butter in a frying pan until sizzling. Add mushrooms and lemon juice, then cook over medium heat for 20-30 minutes until the liquid evaporates and mushrooms start browning.
  4. Finish Mushrooms: Drizzle mushrooms with 1 teaspoon truffle oil, sprinkle with truffle salt to taste, stir, and cook for an additional minute. Remove from heat and set aside.
  5. Prepare Truffle Sauce: Drain soaked cashews. In a blender, combine cashews, water, nutritional yeast, truffle oil, garlic, and truffle salt. Blend until thick and smooth.
  6. Combine and Serve: In a serving dish, mix cooked pasta with the truffle cream sauce and sautéed mushrooms. Optionally, bake the combined dish in the oven for a few minutes to meld flavors. Garnish with fresh thyme and enjoy!

Notes

  • Soaking cashews overnight in cold water is an easy alternative if you plan ahead.
  • You can adjust the amount of truffle salt and truffle oil according to your taste preferences.
  • The thyme adds a wonderful earthy aroma but can be omitted if unavailable.
  • For a gluten-free option, substitute the pasta with gluten-free pasta varieties.
  • Baking the assembled dish briefly after mixing is optional but enhances the flavor melding and texture.
