  4. Portion, flatten and finish for the oven: Spoon tablespoon-sized portions onto the prepared sheet about 2 inches apart. Flatten each mound gently into 2–2.5 inch circles to an even thickness. Sprinkle remaining chives or Parmesan on top for garnish.
  5. Bake to golden crispness: Bake for 30 to 35 minutes until edges turn warm golden brown and surfaces look dry and set. Chips should feel firm and brittle at the edges when done.
