Ingredients

Filling

  • 3 cups shredded cabbage
  • 1/4 cup shredded carrot (if not using coleslaw mix)
  • 1.5 tsp toasted sesame oil
  • 2 tsp grated fresh ginger (or ~1/2 tsp dried ginger)
  • 1 clove garlic, minced
  • 1 tsp reduced sodium soy sauce
  • 1/4 tsp black pepper
  • 2 green onions, sliced

Assembly and Cooking

  • 6 egg roll wrappers
  • 1 tsp olive oil (for brushing)

Instructions

  1. Prepare the Filling: Preheat a frying pan over medium heat for a few minutes. Add toasted sesame oil, grated ginger, minced garlic, shredded cabbage, and shredded carrot to the pan. Cook for 2-3 minutes, stirring occasionally, until the cabbage wilts slightly.
  2. Season the Filling: Stir in sliced green onions, reduced sodium soy sauce, and black pepper. Mix well and remove from heat to cool slightly.
  3. Assemble Egg Rolls: Lay out an egg roll wrapper flat and place an appropriate amount of the cooled filling in the center. Fold in the sides and roll tightly to seal the filling inside. Repeat with remaining wrappers and filling.
  4. Prepare for Air Frying: Brush olive oil evenly over the surface of each assembled egg roll. Also, brush the air fryer basket with olive oil to prevent sticking.
  5. Air Fry Egg Rolls: Place the egg rolls seam side down in the air fryer basket, ensuring they do not touch each other. Set the air fryer to 360°F (182°C) and cook for 7 minutes.
  6. Flip and Finish Cooking: Carefully flip the egg rolls over and air fry for an additional 2 minutes until they are golden brown and crispy all over.
  7. Serve: Remove egg rolls from the air fryer and let cool slightly before serving with your favorite dipping sauce.
