Crispy Smashed Carrots Bites are a delicious and healthy appetizer or side dish. Tender boiled carrot rounds are gently smashed flat, then seasoned with garlic powder, smoked paprika, and Parmesan cheese before roasting to golden, crispy perfection. Garnished with fresh parsley, these bites offer a flavorful, easy-to-make snack that pleases both adults and kids alike.

Ingredients

Carrots

  • 1 lb carrots, peeled and cut into thick rounds

Seasonings

  • 1 tbsp olive oil
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

Garnish

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Boil Carrots: Boil the carrot rounds in salted water for 10–12 minutes, or until they are fork-tender but still hold their shape well. Drain and let them cool slightly so they are easier to handle.
  3. Smash Carrots: Place the boiled carrots on the prepared baking sheet. Use the bottom of a glass or measuring cup to gently press down on each carrot round, smashing them slightly to increase surface area for crispiness.
  4. Season and Top: Drizzle the smashed carrots evenly with olive oil. Sprinkle the garlic powder, smoked paprika, salt, and black pepper over them. Finish by evenly distributing the grated Parmesan cheese over each piece.
  5. Roast to Crisp: Roast the carrots in the preheated oven for 20–25 minutes. Flip them halfway through roasting to ensure both sides become golden brown and crispy on the edges.
  6. Garnish and Serve: Remove from the oven and sprinkle chopped fresh parsley on top for color and freshness. Serve the crispy smashed carrot bites hot, optionally with a dipping sauce of your choice.

Notes

  • Use baby carrots for quicker preparation and a fun, bite-sized presentation.
  • For a dairy-free option, omit Parmesan cheese or substitute with a plant-based Parmesan alternative.
  • These bites pair wonderfully with dipping sauces like garlic aioli or herbed yogurt for extra flavor.
