Delicious and easy Crock Pot French Onion Meatballs made with frozen beef meatballs simmered in a rich French onion soup gravy, topped with melted mozzarella cheese and optionally garnished with fresh herbs. Perfect for a comforting meal served over mashed potatoes or egg noodles with a side of vegetables.

Ingredients

Meatballs and Sauce

  • 24 ounce bag frozen beef homestyle meatballs
  • 10.5 ounce can French Onion Soup (low sodium)
  • 1 packet French onion soup mix (or beefy onion soup mix)
  • 1 cup beef broth (low sodium)
  • 1 cup shredded mozzarella cheese (more to taste)
  • Fresh thyme or fresh parsley (optional, for garnish)

Optional Thickener

  • 2 Tablespoons corn starch
  • ¼ cup water

Instructions

  1. Prepare the Crock Pot: Place the 24-ounce bag of frozen beef homestyle meatballs in a single layer at the bottom of a 4-6 quart crock pot.
  2. Add Soup and Seasoning: Pour the 10.5-ounce can of low sodium French Onion Soup evenly over the meatballs. Sprinkle 1 packet of French onion soup mix over the top and then pour in 1 cup of low sodium beef broth.
  3. Cook the Meatballs: Cover the crock pot and cook on high for 2-3 hours or on low for 5-6 hours until the meatballs are heated through and the flavors meld.
  4. Optional Thickening Step: If you prefer a thicker gravy, in a small bowl, stir together 2 tablespoons of corn starch and ¼ cup of water to make a slurry. Pour this mixture into the crock pot, stir well to combine, then cover and cook for an additional 10 minutes.
  5. Add Cheese: Sprinkle 1 cup of shredded mozzarella cheese evenly over the meatballs in the crock pot. Cover and allow the cheese to melt completely.
  6. Garnish and Serve: Optionally, sprinkle fresh thyme or chopped parsley on top before serving. Serve the meatballs over mashed potatoes or egg noodles with a side of green beans for a complete meal.

Notes

  • Use low or no sodium ingredients where possible to prevent the dish from becoming too salty. You can adjust salt to taste after cooking.
  • Frozen meatball quantity can be adjusted slightly if needed; cooking times remain the same.
  • If you do not want a thicker gravy, you can skip the corn starch slurry step.
  • This dish freezes well if you want to prepare ahead or save leftovers.
  • For dairy-free option, omit cheese or substitute with suitable plant-based cheese.
