Crunchy Pizza Potato Cups are a delicious and savory breakfast treat made with crispy tater tots baked in muffin tins and filled with classic pizza toppings like mozzarella, pizza sauce, pepperoni, and Italian seasoning. This easy-to-make recipe combines the convenience of a hand-held breakfast with the flavors of your favorite pizza, perfect for breakfast on-the-go or a snack.

Ingredients

Base

  • 4-5 Frozen Tater Tots per muffin cavity (approximately 48-60 tots)

Fillings

  • 1 cup Shredded Mozzarella Cheese
  • ¾ cup Pizza Sauce or Marinara Sauce
  • 12 slices Pepperoni
  • 1 tablespoon Italian Seasoning

Garnish

  • Fresh Basil, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot enough to crisp up the tater tots perfectly.
  2. Fill Muffin Tin with Tater Tots: Take 4 to 5 frozen tater tots and place them into each cavity of a muffin tin, filling all 12 muffin cavities.
  3. Bake Initial Layer: Place the muffin tray filled with tater tots into the preheated oven and bake for 11 minutes to start crisping the base layer.
  4. Indent the Tots: Remove the tray from the oven and press down the tater tots in each muffin cavity using the back of a spoon or shot glass to create an indentation that will hold the pizza fillings.
  5. Add Fillings: Spoon shredded mozzarella cheese into each indentation first, then add a layer of pizza sauce, followed by another layer of shredded mozzarella cheese, then top each cup with one slice of pepperoni and sprinkle with Italian seasoning.
  6. Bake Again: Return the muffin tray to the oven and bake for an additional 10 minutes, until the tater tots are golden and crunchy and the cheese is melted and bubbly.
  7. Cool Before Serving: Remove from the oven and allow the pizza cups to cool for 15 minutes so they set and hold their shape.
  8. Garnish and Serve: Sprinkle fresh chopped basil on top of each pizza cup before serving to add freshness and color. Enjoy warm as a delicious breakfast or snack.

Notes

  • You can substitute pepperoni with cooked sausage, ham, or a vegetarian alternative.
  • For a spicier version, add crushed red pepper flakes with the Italian seasoning.
  • Ensure to press the tater tots gently to avoid breaking the crust fully, you want them compacted but still maintaining structure.
  • Allowing the cups to cool is crucial for them to hold together when removed from the muffin tin.
  • These cups can be made ahead and reheated in the oven or air fryer for 5 minutes before serving.
