Ingredients

Sushi Rice

  • 1.5 cups (270 g) sushi rice
  • 1.5 cups water
  • 2 tablespoon rice vinegar
  • 1.5 tablespoon sugar
  • 1.5 teaspoon salt

Eel Sauce

  • 2 tablespoon soy sauce
  • 2 tablespoon mirin
  • 1 tablespoon sugar
  • 1 tablespoon water

Sriracha Mayo

  • 1 tablespoon mayonnaise
  • ¼ tablespoon sriracha
  • ⅛ teaspoon sugar
  • ¼ teaspoon rice vinegar

Vinegar Water for Dipping Hands (Tezu)

  • ¼ cup water
  • 2 teaspoon rice vinegar

Other Sushi Ingredients

  • 4 oz (113.4 g) imitation crab sticks or sushi-grade salmon or tuna
  • 1 ripe medium avocado, sliced into 1.5cm (0.5 inch) sticks
  • ¼ cucumber, deseeded and cut into sticks
  • ½ cup crunchy fried onions, spread onto a tray
  • 3-4 sheets nori (seaweed)

To Serve (Optional)

  • Soy sauce
  • Wasabi
  • Sushi ginger

Instructions

  1. Soak and Rinse Rice: Place the sushi rice in a large bowl and cover with water. Let it soak for 10 minutes, then rinse the rice under cold water until the water runs clear to remove excess starch.
  2. Cook the Rice: Transfer the rinsed rice into a saucepan and add 1.5 cups of water. Bring to a boil with the lid on over high heat for 5 minutes, then reduce the heat to low and simmer for 10 minutes until water is absorbed. Keep the lid on and remove from heat.
  3. Season the Rice: While the rice is still hot, mix rice vinegar, sugar, and salt in a small bowl until dissolved. Transfer the cooked rice to a large shallow dish or tray and gently fold in the vinegar mixture with a spoon, distributing it evenly. Allow the rice to cool to room temperature.
  4. Make the Eel Sauce: In a small pan, combine soy sauce, mirin, sugar, and water. Bring to a boil and simmer for 10 minutes. Remove from heat and let the sauce thicken as it cools.
  5. Prepare Sriracha Mayo: Mix mayonnaise, sriracha, sugar, and rice vinegar in a small bowl until smooth. Set aside.
  6. Prepare Vinegar Water (Tezu): Combine water and rice vinegar in a medium bowl large enough for dipping hands. This will prevent rice from sticking to your hands during rolling.
  7. Assemble the Rolls: Place one nori sheet on a bamboo sushi rolling mat with the rough side facing up. Dip your hands into the vinegar water to keep them moist and spread an even, thin layer of sushi rice over the nori, reaching all corners.
  8. Add Fillings: Flip the nori sheet over so rice is on the bottom. Arrange imitation crab or fish, avocado sticks, and cucumber sticks along the edge closest to you.
  9. Roll the Sushi: Begin rolling the sushi tightly from the edge with the fillings, using the bamboo mat to help press and shape the roll firmly until the rice edge touches the nori sheet, sealing the roll. Press gently on top with the mat to compact.
  10. Repeat Rolls: Repeat the assembly process to make 3 more rolls.
  11. Finish the Rolls: Drizzle each roll with eel sauce and then sriracha mayo. Sprinkle an even layer of crunchy fried onions on top for crunch.
  12. Slice the Rolls: Wet the blade of a sharp knife to prevent sticking. Cut each roll into eight even pieces by halving the roll, then halving each half, and finally cutting each quarter in half again.
  13. Serve: Serve immediately with soy sauce, wasabi, and sushi ginger on the side, or refrigerate for later enjoyment.

  • Rice cooker instructions: Place rinsed rice in the rice cooker pan, fill with water to the correct level, and use the sushi rice mode for perfect cooking.
