Ingredients

For Crust:

  • 1 1/4 teaspoon instant yeast
  • 1/2 cup warm water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 1/4 cups (170 grams) all-purpose flour, plus more for surface
  • 1 tablespoon fresh dill, chopped

For White Sauce:

  • 2 tablespoons butter
  • 3 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup (3 ounces) Parmesan cheese, shredded

For Pizza:

  • 2 cups (8 ounces) mozzarella cheese, shredded
  • 16 dill pickle chip slices

For Creamy Garlic Sauce:

  • 1/4 cup (60 grams) sour cream
  • 1/4 cup (60 grams) mayonnaise
  • 1 garlic clove, minced
  • 2 tablespoons dill pickle juice
  • 1 tablespoon fresh dill, chopped

For Final Toppings:

  • Crushed red pepper, optional
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot and ready for baking the pizza.
  2. Prepare the Crust: In a medium bowl, sprinkle the instant yeast over warm water and let it sit for 5 minutes until it activates and becomes foamy. Stir in olive oil, salt, sugar, flour, and chopped fresh dill using a wooden spoon until the dough comes together. Knead the dough on a lightly floured surface for 1-2 minutes until it forms a smooth, slightly sticky ball. Cover with a clean kitchen towel and set aside.
  3. Make the White Sauce: In a medium saucepan over medium heat, melt butter and sauté the minced garlic until fragrant. Whisk in flour and cook for 1 minute, stirring constantly to form a roux. Slowly add whole milk while whisking continuously to avoid lumps. Add Italian seasoning, salt, and black pepper. Cook the sauce over medium heat for 4-5 minutes until it thickens, whisking frequently. Reduce heat to low, stir in Parmesan cheese until melted, then remove from heat and set aside.
  4. Shape the Dough: On a lightly floured surface, roll out the dough with a rolling pin into a 12-inch circle. Transfer the rolled dough to a lightly oiled pizza pan or baking sheet.
  5. Assemble the Pizza: Spread the prepared white garlic sauce evenly over the dough, leaving a 1/2-inch gap around the edges for the crust. Sprinkle shredded mozzarella cheese over the sauce. Pat dry the dill pickle slices with paper towels and arrange them evenly on top of the cheese.
  6. Bake the Pizza: Place the pizza on the middle rack of the preheated oven. Bake for 15-20 minutes or until the cheese is melted, bubbly, and lightly browned.
  7. Prepare Creamy Garlic Sauce: While the pizza bakes, mix sour cream, mayonnaise, minced garlic, dill pickle juice, and chopped fresh dill in a medium bowl until well combined.
  8. Add Final Toppings and Serve: Once the pizza is baked, sprinkle crushed red pepper and additional fresh dill over the top if desired. Drizzle the creamy garlic sauce over the pizza or serve it on the side for dipping. Slice and enjoy.

Notes

  • You can substitute fresh dill with dried dill in a smaller quantity if fresh is not available.
  • Ensure pickle slices are patted dry to prevent sogginess on the pizza.
  • The creamy garlic sauce adds a tangy, cool contrast, but you can omit it if preferred.
  • For a crispier crust, use a pizza stone or preheat the pizza pan before placing the dough on it.
  • To make the crust gluten-free, substitute the all-purpose flour with a gluten-free flour blend suitable for yeasted doughs, and adjust liquid as needed.
