Diplomat Cream, or Crème Diplomate, is a smooth and luxurious vanilla cream made by blending classic pastry cream with gelatin and folded whipped cream. This light and airy cream is perfect for filling cakes, choux pastries, and fruit tarts, offering a delicate texture and elegant flavor that elevates any dessert.

Ingredients

Pastry Cream

  • 250 ml (1 cup) semi-skimmed or whole milk
  • 1 vanilla bean or 1 tsp vanilla extract
  • 40 g egg yolks (about 2–3 yolks)
  • 50 g (¼ cup) granulated sugar
  • 25 g (¼ cup) cornstarch
  • 2 sheets gelatin

Whipped Cream

  • 200 ml (¾ cup) heavy cream, full-fat and very cold

Instructions

  1. Soften Gelatin: Place the 2 gelatin sheets in cold water and let them soak for 10 minutes until softened.
  2. Infuse Milk: Heat 250 ml milk with the split vanilla bean until it just boils, then remove from heat and let it infuse for 10 minutes to extract vanilla flavor.
  3. Mix Egg Yolks: Whisk together 40 g egg yolks, 50 g granulated sugar, and 25 g cornstarch for 2 minutes until the mixture is smooth and pale.
  4. Combine Mixtures: Remove the vanilla bean from the milk. While whisking continuously, pour the hot milk slowly over the egg yolk mixture to temper it.
  5. Cook Pastry Cream: Return the combined mixture to the saucepan and cook over medium heat, whisking constantly until it thickens. Once it boils, cook for an additional 2 minutes to ensure full cooking of starch and eggs.
  6. Add Gelatin: Remove from heat, squeeze out excess water from the softened gelatin sheets, and whisk them into the hot pastry cream until fully dissolved.
  7. Chill Pastry Cream: Spread the pastry cream in a dish, cover with plastic wrap touching the surface to prevent a skin, and refrigerate until completely cold and set.
  8. Whip Cream: Pour the very cold 200 ml heavy cream into a chilled bowl and whip on medium speed for about 3 minutes or until stiff peaks form.
  9. Loosen Pastry Cream: Transfer the chilled pastry cream to a large bowl and beat it with an electric mixer for 1–2 minutes to loosen and smooth it.
  10. Fold in Whipped Cream: Gently fold the whipped cream into the loosened pastry cream with a spatula until the mixture is smooth and creamy, taking care not to deflate the airiness.
  11. Use or Store: Use the diplomat cream immediately as a filling or cover and refrigerate. For a firmer texture, chill assembled cream before use.

Notes

  • Storage: Keep diplomat cream refrigerated in an airtight container for up to 2–3 days. It is not suitable for freezing, as texture will be compromised.
  • Use very cold heavy cream for stable, well-whipped cream.
  • Ensure the pastry cream is cooked thoroughly until thickened for proper texture and to avoid raw starch taste.
  • Stir the softened gelatin well into hot pastry cream to fully melt and incorporate.
  • Loosen the pastry cream by beating before folding whipped cream to achieve a smooth and airy consistency.
  • If a firmer cream is desired, chill the assembled diplomat cream before using it as a filling.
