Instructions

  1. Prepare the Ingredients: Peel and cube the potatoes into bite-sized pieces. Thinly slice the onions and mince the garlic cloves thoroughly to prepare for cooking.
  2. Caramelize Onions: Heat the vegetable oil in a pan over medium heat. Add the sliced onions and cook them slowly, stirring occasionally, until they turn golden brown and develop a deep, rich flavor; this usually takes about 10-12 minutes.

  5. Add Tomatoes & Liquid: Pour in the diced tomatoes and the water or vegetable broth. Stir well to combine all ingredients.
  6. Simmer: Cover the pan and simmer the mixture for 15-20 minutes. Stir occasionally to prevent sticking and ensure the potatoes cook through and the sauce thickens nicely.
